Some nights dinner is planned, prepped, and Pinterest worthy.
Other nights… I’m digging through cabinets like a raccoon, praying I’ll find something quick before the hangry children stage a coup.
Last night was definitely a raccoon night! A box of beef stroganoff saved the day, quick, easy, and exactly what the husband and daughter needed after coming in cold and hungry from an evening in the woods hunting.
I’ll be honest, I felt that twinge of mom guilt. I’m not a fan of boxed meals, especially the mystery powdered sauces. But I gave myself a small gold star for using our primal ground beef and a generous splash of raw milk.
Was it perfect? Nope.
Was it on the table in under 20 minutes and devoured without a single complaint? Absolutely.
Dinner doesn’t have to be flawless. Sometimes feeding your family well just means doing the best you can, and choosing real, nutrient-dense ingredients, even on (especially on!) the raccoon nights.
