H2O Brewery We started brewing in 2018 when Jenn got me a homebrew kit from Maltose Express for Christmas. We’ve produced over 30 beers to date (150 gallons).

Our “Skull Splitter” Wee Heavy (7.4% Scotch Ale) was laid down into storage today. Our first foray into both bottle and keg conditioning - adding a final dose of sugars for the beer to develop further over the next 4-8 months.

Today we are brewing Bert Grant’s Imperial Stout. 7.1% target ABV. All being well, ready to drink in March when it’s aged a little.

Bert opened one of the first brew pubs in the US so it’s said, and his stout won awards up and down the country.

This video just as the boil is starting shows the gorgeous espresso color we can expect in the final product!

Brewing “Skull Splitter” a Scottish Wee Heavy that should (fingers crossed) come out in the 8% range. Will be kegged in a month and ready to drink in March 2022.

With the Celebration Ale currently on its dry hops this the first time we’ve got both fermenters in action at the same time.

Early start this morning as we helped out the volunteers at Maltose Express and Veracious Brewing Company picking fresh hops right off the vine. Net result - buckets of Cascade and Columbus!

Our first 10 gallon brew day. Adnam’s Broadside clone by our friends over at Maltose Express.

Mash-in went well and 26LBs of grain and over 16 gallons of water really put the Spike Brewing Solo to the test. After the boil the Exchillerator cranked the wort down to 80F in no time, and the temp control on Fermenter #1 got us to 70F ready to pitch the yeast.

Not forgetting the Bass Ale test batch from last week that went into the carboy for conditioning. This is a stage we can skip going forward as the conicals handle primary and secondary cycles.

Made it through first brew day with the new e-Kettle from Spike Brewing. Loved the process, and the Exchillerator brought the wort down from the 180s to 72F perfectly. This batch is going old school into a bucket as the stainless fermenters are not ready yet.

Christening this Bass Ale clone as the “Three Lions Brew” for England today 🏴󠁧󠁢󠁥󠁮󠁧󠁿⚽️

Bought the leg extensions for Spike Brewing Fermenter #1 and got to say I like this a lot. Will allow for additional attachments on the 2” port, like a sight glass, as well as making the vessel more stable since it’s going to hold 12 gallons of liquid goodness!

I can see another set being ordered for F #2 pretty soon…
