I had oral surgery yesterday. All I can think about today is food!

So here's a recipe for Honey Garlic Chicken. Serve over rice with a side of mixed veggies or salad.

Honey Garlic Chicken

Ingredients:
Sauce
1/3 cup honey
2 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp sriracha (Personally, I'm a wimp so I skip this :-))
2 tsp toasted sesame oil
1 Tbsp cornstarch
Chicken
2 boneless, skinless chicken breasts or thighs (about 1-1.5 #)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
2 Tbsp all-purpose flour
3 Tbsp olive oil
2 Tbsp butter
4 cloves of garlic, minced
2 green onions, sliced

Instructions
*Make the sauce. Combine the honey, soy sauce, rice vinegar, sriracha, toasted sesame oil, and cornstarch together in a small bowl. Set aside.
*Cut the chicken breasts into 1/2 inch sized pieces. Season with salt, black pepper and garlic powder. Toss the chicken pieces in the flour until each piece is evenly coated.
*Heat a large skillet over medium-high heat and add 2 Tbsp of oil. *Swirl to coat the surface of the skillet. Once the skillet is hot, add half of the chicken and cook until browned on all sides and cooked through. Remove the chicken from the skillet onto a separate plate and set aside. Add the remaining oil and repeat process with the rest of the chicken. Set all of the chicken aside.
*In the same skillet add the butter and lower the heat to medium-low. Add the minced garlic and saute for 30-60 seconds until fragrant.
*Give the sauce a brief stir and pour into the skillet with the garlic. Stir the sauce and scrape up any browned bits that are stuck at the bottom of the skillet. Let simmer for about 2 minutes to allow the sauce to thicken.
*Add the cooked chicken to the skillet and stir with the sauce until all of the pieces are evenly coated. Continue to cook for 1-2 more minutes to allow the chicken to heat through.

Remove the skillet from the heat, top with sliced green onions (I also like sesame seeds on mine), and serve on a bed of rice!.

As promised, a good use for your honey. A great recipe to help soothe a sore throat, whether from coughing, drainage, or whatever.

Sore Throat Tea

Ingredients
2 lemons thoroughly cleaned and thinly sliced
2 pieces of peeled ginger (about the size of your pointer finger) thinly sliced
1 cup of honey (or as much as needed to fully cover your lemon and ginger)

Instructions
Layer the lemon and the ginger slices in a pint sized jar. I recommend alternating layers.

Pour the honey over the lemon and ginger. Stir the lemon and ginger around a bit to make sure it gets into all of the empty spaces.

Press down lemon slices and ginger to ensure they are completely covered by honey.

Put the lid on the jar and place it in the refrigerator. After a couple of days, it should become like jelly.

Store in the refrigerator and add a spoonful to a cup of tea or hot water when your throat is sore or scratchy.

I have also used just honey and lemon in hot water. Surprisingly, honey and apple cider vinegar work well, too!

Quarts - $18; pints - $10; half-pints - $6

Well, after a couple of really rough months, we finally got our honey harvested and spun.

Same prices as last year: $18 for a quart, $10 for a pint, and $6 for a half pint (jelly jar size).

We didn’t jar it all up yet but we have plenty of quarts and will bottle pints and half pints on request (half pints make great gifts!)

We’ve been quiet on Facebook but we’re busy as bees! Prepping boxes and swarm traps, making sure we’re ready as our little friends do their thing. They’re flying well and seem to be doing great. We’re hoping to have a good amount of honey this year. Thanks for being part of our little hive!

I know we’ve been quiet but that doesn’t mean things aren’t happening. The bees have been flying quite a bit. New boxes, frames, and foundations have been ordered. And a couple of new colonies will be, hopefully, coming soon.

And some have asked and I should have posted before - we are out of honey for this season. Thank you for your support last season. We hope to have a good supply this year!

We’re gearing up for the coming warm weather (the real stuff, not this fake spring) and busy bees. We’ve kept our remaining hive fed and, hopefully, healthy over the winter and are planning for 2-3 more. We really enjoyed last year and connecting with you all through the fruits of our little friends’ labors. Thank you for joining us in this journey. We’re hoping for another productive year!

I ran across this recipe for a lovely tonic today. I’d share a link but the site is so overrun with ads that I spent several minutes just finding the actual recipe. With it being cold and flu season, I’d guess this would be a good immune booster.

Honey, Lemon, Ginger, Garlic, and Onion Tonic

Creating a health tonic with these ingredients is simple. Here’s a basic recipe:

Ingredients: 1 tablespoon honey, 1 tablespoon lemon juice, 1 teaspoon grated ginger, 1 clove of minced garlic, and 1 tablespoon of onion juice.

Note: the photo showed thin slices of onion and lemon and sliced cloves of garlic in a jar filled with honey (probably thin slices of ginger, also.) I would guess you could use the whole ingredients and allow them to marinate together.

Preparation: Mix all the ingredients in a bowl. You can take a tablespoon of this mixture once a day, either in the morning on an empty stomach or before going to bed.

Storage: Store the mixture in a sealed jar in the refrigerator. It can be kept for up to a week.

Benefits of the Mixture:

Boosts Immunity: This combination works wonders in strengthening the immune system.
Promotes Digestive Health: The ingredients aid in digestion and can alleviate digestive problems.
Heart Health: The anti-inflammatory and antioxidant properties help in maintaining heart health.

There are certain things that are so decadent that I would only consider making them for holidays or very special occasions. Baklava is one of those things. And since honey is a big part of the deliciousness, it seemed the perfect recipe to share. Make this and you’ll be a hero at Christmas dinner or a New Year’s Eve party.

Can you use honey in place of sugar? The answer is probably. Some recipes won’t work as well but there are a lot of places where you can easily substitute honey. For example, I only use honey in bread making.

But I’m not an expert, so I did a little research online and this website gave me some great information, so I’m sharing it with you. Hope it’s helpful!
