Best Damn Vegan Chick’n Salad!

Chick’n Salad is a quick, convenient and delicious meal or snack, and we’ve created our own little recipe that is sure to be a crowd pleaser! Our take on the classic Chicken Salad Sandwich is simple, delicious and of course, vegan. This recipe can be modified if you like adding more crunch in the form of celery or walnuts, but we prefer this simple recipe that combines sour apple, sweet and tart cranberries, spicy hot sauce, creamy mayo and of course, savory Deliciou Chicken.

INGREDIENTS:
• 1 Box of Deliciou Chick’n
• 1 Granny Smith Apple, Diced
• 1/4 cup dried cranberries
• 1 Tbs Piqualé Sweet Hot Sauce
• 3/4 cup vegan mayo
• Salt & Pepper to taste
The Sandwich
• Chick’n Salad
• Your favorite vegan bread, toasted
• Vegan Mayo or try our Sweet Hot Aioli ( 1 Tablespoon of Sweet Hot Piqualé with 1/2 cup vegan mayo mixed together)
• Lettuce or other sandwich greens

DIRECTIONS:
1. Cook the Deliciou according to the instructions on the box. Let cool for 15 minutes.

2. Combine Cooked Deliciou, 1 tablespoon of Piqualé Sweet Hot Sauce and 3/4 cup of vegan mayonnaise and mix thoroughly. You may need to add more vegan mayo depending upon how rich and creamy you like your chick’n salad.

3. Stir in diced granny smith apples and dried cranberries. Mix thoroughly and add salt and pepper to taste.

4. Toast your favorite vegan bread, add some lettuce and scoop out a heaping portion of the chick’n salad and enjoy!

Nothing beats a hearty bowl of soup on a chilly day and this recipe for Sweet and Savory Corn Chowder with a touch of Piqualé Hot Sauce will have everyone asking for seconds. Recipe below!

INGREDIENTS

10 ears of white/bicolor sweet corn, husks and silk removed
1 large yellow onion, chopped
2 shallots, chopped
3/4-1 stick vegan butter
2 cups unsweetened plant based milk
1-2 cups dried potato flakes
3 Tbs Piqualé Sweet Hot
Salt & pepper, to taste

DIRECTIONS

1. Fill a large pot about 3/4 full of water and bring to a boil. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 5-7 minutes.
2. Remove corn from water and slice kernels off the cob. Set corn aside.
3. In a large pot, melt 1/4 stick of vegan butter over medium heat.
4. Add onion, shallots, salt and pepper. Cook until translucent. Add 1/2 of the cooked corn. Cook until corn starts to brown. Add butter as needed to keep mixture from sticking.
5. Add 2 cups of plant based milk, Piqualé Sweet Hot sauce and mix thoroughly.
6. Blend ingredients thoroughly using an immersion blender.
7. Once mixed, add the remaining cooked corn and potato flakes, mixing well.
8. Add salt & butter to taste. Simmer on low heat for 10-15 minutes and serve.

We’re stuffing jalapeños and topping with our special Vegan remoulade. Recipe below!

INGREDIENTS

Stuffed Jalapeños
1/2 cup of breadcrumbs
1 cup of cooked plant-based grounds or protein of choice
10-12 jalapeño peppers
Piqualé Cashew Queso

Remoulade
1 cup of vegannaise
2 Tbs whole grain mustard
1 Tbs organic ketchup
1 garlic clove, minced
2 Tbs fresh horseradish
1 Tbs fresh lemon juice
1/4 cup capers, minced
1 scallion, chopped
2 tsp smoked paprika
1 Tbs Piqualé Original

DIRECTIONS

Remoulade
1. Combine remoulade ingredients into a mixing bowl and whisk until smooth.
2. Put sauce in a container and refrigerate for at least an hour.

Stuffed Jalapeños
1. Slice the jalapeños horizontally to create a pocket for the filling.
2. Fill with pre-cooked plant-based beef grounds or the protein of your choice.
3. Top with a little Piqualé Cashew Queso and bread crumbs.
4. Wrap in foil or set in a cast iron dish and place on a medium hot grill for 7-10 minutes or until bread crumbs are golden brown.
5. Drizzle with Piqualé remoulade sauce and serve.

Looking for a quick, flavorful and spicy appetizer? Try our Golden Cashew Crema!

Ingredients
3/4 cup hot water
1 cup unsalted cashews
1/8 tsp garlic powder
3 Tbs nutritional yeast
1/2 tsp salt, plus more to taste
3 Tbs Piqualé Original Hot Sauce

Directions
1. Add water and cashews to a blender and pulse until blended.
2. Add the remaining ingredients and blend until creamy, adding more water until you reach your desired consistency.
3. Taste and adjust flavor as needed, adding Piqualé for spice and nutritional yeast for a cheesier flavor.
4. Add to nachos, as a dip for chips or add to tacos, burritos or other favorite dishes.
5. Store remaining sauce covered in the refrigerator up to a week.
