So what’s going on?!
In the vineyard, the vines are officially dormant! Dormancy takes place every winter as each vine sheds all of its leaves. Dormancy is a resting period for the vine until bud break and new growth begins this upcoming Spring!
In the winery, our sweet Blanc Du Bois wine has been cold stabilizing the past 2 weeks. This is a time in which the wine is chilled just below freezing to allow acid crystals (commonly known as wine diamonds) to fallout before bottling!
