Went for a walk in our sugarbush and saw the Dutchman’s Breeches blooming. We also did some foraging and created a meal of venison stroganoff and salad. The venison was from a friend’s hunt in Alabama and it was flavored with ramps and West Virginia moonshine. The salad had marinated fiddlehead ferns and ramps.

The rate at which sap was running last evening when we left the woods at 7pm, we figured the tanks would be full in 8 hours. When Donna arrived at 3:30 am the big tank was an inch from running over. The Reverse Osmosis machine is removing water now and we will start boiling around 8:30 am.
