Hi Everyone!
In the challenge of better bacon I tried a western Cowboy style new bacon for me … I cured it 7 days with my western NC spice profile as normal and smoked in oak and method but took a pork shoulder de-b***d it , and cut it out flat vs pork belly and cured and smoked like I do my bacon ( for those who know 😉) and I must say this is awesomeness! It’s 50% leaner so it cooks quick but amazing flavor.
If you want , it’s limited and will go fast . 150 grams at 390 peso a package .
Everything is better with bacon !
