🌮🧀 Crispy Chicken Taquitos

Crispy and golden on the outside with a creamy, cheesy chicken filling inside, these Chicken Taquitos are an easy dinner or game-day snack everyone can grab and dip. Serve them hot with salsa and sour cream for an extra flavorful bite! 😍🌮

INGREDIENTS:
• 2 cups shredded rotisserie chicken
• 8 medium flour tortillas
• 4 oz cream cheese, softened
• 1 cup shredded Colby Jack cheese
• 1/2 cup salsa
• 1/4 cup sour cream
• 1/2 tsp garlic powder
• 2 tbsp chopped cilantro, optional
• Oil for frying
• Extra salsa and sour cream for serving

DIRECTIONS:
1. Add the shredded chicken, cream cheese, Colby Jack cheese, salsa, sour cream, garlic powder, and cilantro to a large bowl.

2. Mix until everything is creamy and evenly combined.

3. Spoon the chicken mixture in a line near one edge of each flour tortilla. Roll each tortilla tightly around the filling.

4. Heat a thin layer of oil in a large skillet over medium heat.

5. Place the taquitos seam-side down in the skillet. Cook in batches, turning as needed, until crispy and golden brown on all sides.

6. Transfer to a paper towel-lined plate to remove excess oil.

7. Serve warm with salsa and sour cream for dipping. 🌶️🤤

PRO TIP:
Keep the filling away from the very edges of the tortillas so it stays inside while the taquitos get crispy.

There’s a huge Needoh craze right now… so of course we had to try making our own at home 💛
We were looking for a simple DIY version, and this is the one we ended up trying—and it turned out SO good!
We didn’t follow an exact recipe, just adjusted as we went: 👉 about 2 parts cornstarch + 1 part hair conditioner + a few tablespoons of water
Mix it with your hands until:
✔️ it’s not sticky
✔️ it becomes soft and moldable (like dough)
Then fill it into balloons… and you’ve got your own homemade Needoh ✨
It’s:
✔️ such a satisfying stress ball to squeeze
✔️ super easy to customize (any color, draw faces on it, make it fun!)
✔️ and honestly just as fun to make as it is to play with
My kids LOVED the whole process—from mixing to squishing 🫶
Save this for later 💾
