Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes
- 3 cups fresh spinach
- 1/3 cup balsamic vinegar
- 1 tbsp honey or brown sugar
- 1/2 cup chicken broth
- Optional: red pepper flakes
Directions:
1. Begin by seasoning your chicken breasts with salt, pepper, and Italian seasoning. Don't be shy with those spices; flavor is key!
2. Heat the olive oil in a large skillet over medium-high heat, until it's shimmering and ready for action.
3. Once the oil's hot, sear the chicken for about 5–6 minutes on each side, until it’s beautifully golden and cooked through. Remove the chicken and set it aside to keep warm.
