Don't forget that when you buy a beef you also are getting the offal! Offal is the organ meats, which is usually the tongue, liver, heart and tail. There are so many options on how to prepare them for yourself and even your fur babies. So make sure you are asking about those when the meat shop calls for your cut and wrap order.
