Tonight’s supper was a new recipe for us, lamb loaf, and it was delicious! Pictures of meatloafs rarely look appetizing to me so you will have to take my word for it or try it yourself. It won the approval of Jewelianna!
1/2 teaspoon oil
2 slices dry bread, diced
½ teaspoon vegetable oil, or as needed
¼ cup milk
1 pound ground lamb
1 egg
4 cloves minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon Worcestershire sauce
1 tablespoon lemon zest
1 teaspoon ground coriander
1 teaspoon dried basil
1 teaspoon dried rosemary, crushed
¾ teaspoon salt
¼ teaspoon ground black pepper
¼ cup tomato sauce
5 leaves fresh mint, finely chopped
2 tablespoons balsamic vinegar
Oil pan and set aside. Preheat oven to 400. Soak bread pieces in milk. Mix all ingredients except for tomato sauce, mint and balsamic vinegar. Form into a loaf then mix sauce and mint leaves. Pour over loaf. Drizzle with balsamic vinegar. Bake for 35-45 min.
