Smothered Oxtails with Rich Brown Gravy 🍖🍲

This is Sunday-dinner, windows-fogged-up, rice-ready kind of cooking.

1. Sear like you mean it. Season, lightly flour, then brown those oxtails until they’re deeply caramelized. That crust = the backbone of your gravy. No pale oxtails allowed 🔥

2. Build the gravy in the same pot. Don’t wash away the flavor! Whisk flour into the drippings, slowly add beef stock, and let it turn smooth and golden. That’s layered flavor doing its thing 🥄

3. Low and slow wins. ♨️ Cover and braise at 325°F until they hit 180–200°F and are fork-tender. Collagen melts, meat gets silky, and the gravy hugs every bite. Serve over hot rice and let it rain gravy 🍚
