When it comes to beef weights, there are 3 different ones of which customers should be aware of.
The first is “LIVE” weight. This is what the animal weighed on the hoof, or when it was alive. We do not have a scale for live weight at our plant. If you would like to get this weight we recommend going by a drive on scale.

The next weight is the “HANGING” weight. The weight difference from live to hanging is from loss of blood, head, hide, hooves, viscera, lungs, and heart. The hanging weight can vary from 55% to 62% of the live weight depending on age and body condition.
So for example, a 1200 pound animal (live weight) under 30 months of age and in a body condition of above 7 would have a hanging weight of 744 pounds.
The next weight is “HANGING” weight. The weight difference from live to hanging is from loss of blood, head, hide, hooves, viscera, lungs, and heart. The hanging weight can vary from 55% to 62% of the live weight depending on age and body condition.

The “FINAL” or “TAKE HOME” weight is again different.
The weight is lost in 2 ways - from hanging to take home weight. About .05% of water weight is lost per day the carcass is hanging we only recommend hanging carcass for 7 days if under 30 months of age and up to 21 days for animals over 30 months of age. Then about another 35% is lost during the cutting process. This amount is variable based on 2 factors – one is the amount of fat in the meat, and the other is the cuts that you request. Higher fat could mean more loss if it is excessive. Also, the more boneless cuts requested by the customer, the lower the final weight. (Note that the lower weight doesn’t mean that you are receiving less meat – rather, you are receiving fewer bones).

In these modern times where speed, deadlines, and the ruthless need for efficiency have become of utmost importance, the Estrella Ranch operation is a throw-back to another era, one where quality is valued significantly more than speed, cost, and efficiency. At Estrella Ranch, we raise our cattle in a manner that can be compared to the early days of raising livestock. In a manner that is simple and much more natural than what is typically seen today. Our vocation is to provide an environment where the cows can grow and reproduce in a natural setting. Where the grass they eat has never been fertilized with chemicals or treated with pesticides. Our values lie in raising cattle as humanely as possible and as a result we have found that these animals are much healthier.

The Estrella Ranch is a 13,500-acre property in Northeast Texas where our cattle are able to roam freely in large pastures. The cattle are constantly rotated to fresh pastures in order to ensure clean and manure-free grass for them to eat. The cattle are provided plenty of shade and water just as Mother Nature intended. Our cows are never confined and are never fed grains or any other unnatural food products. We do not feed our cows antibiotics and we never utilize growth hormones. Our cattle are raised naturally and are harvested at their peak condition. This results in meat that is not only full flavored and consistent in its texture, but also contains the right balance of Omega-3 to Omega-6 fatty acids as well as the all-important linoleic acid (CLA). This high-quality meat comes from the cattle’s 100% grass nutrition.

Our Values

Our values at Estrella Ranch stem from our family’s rural upbringing. It was our custom to harvest our meat and produce from our own production, ensuring wholesomeness and quality. We firmly believe that much of the ailments that threaten the well being of present-day generations are rooted in a diet that consists mostly of highly processed foods, which are loaded with chemical preservatives and it is our belief that these foods are a great source of toxicity. This also occurs with cattle that are submitted to feeds that are unnatural to them such as grains, corn, GMOs, soy and others.
