Let’s talk about Nitrates and Nitrites!
If you’ve heard in recent news, the WHO (World Health Organization) has just released that deli ham, bacon, and other processed meats are now classified as a group one carcinogen. The same classification as to***co, arsenic, and asbestos.
It’s not the meat itself that’s carcinogenic, it’s the chemicals used during the curing and processing. Two of the main cancer-causing ingredients being nitrates and nitrites.
Nitrates and Nitrites: Used as preservatives, they convert N-nitroso compounds (NOCs) in the gut, which can damage DNA and increase cancer risk.
As farmers or homesteaders, it’s unfortunate when you spend so much time and effort raising animals the way they should be raised; out on pasture, nongmo, organic etc. But then to have them processed with these chemicals!
We are happy that the WHO has released this information, but THANKFULLY this is not new news to us! We have been nitrate free for nearly 14 years. This is a non-negotiable for us as a farm!
All of our meat is naturally cured WITHOUT nitrates and nitrites (unless you choose otherwise when customizing your wholesale cuts, but we always encourage you to choose nitrate-free).
This is something we are very passionate about and a hill we will die on; bringing wholesome food to the tables in our customer’s homes. This means the entire process from the life and care of the animals to the way it is processed and packaged.
