Rubbery smoked-wing skin? Here’s the crispy-skin cheat code:
Leave the wings uncovered and unseasoned in the refrigerator for 24 hours. Coat them with 1 tbsp baking powder before seasoning and cooking. Baking powder raises the skin’s pH, helping it brown and crisp. Finish at 425°F to crisp that skin.
