Meet LOLA Birria Loca, the newest restaurant to call Depot 303 home—created by the same chef and owner behind Layers by KC.

LOLA was born from a love of classic birria and a curiosity for what happens when you’re not afraid to break a few rules. Her mantra says it best: Classic Roots. Wild Ideas.

Expect slow-cooked birria, crispy quesabirria tacos, hot consommé made for dipping, birria soup, rotating limited-time drops, plus something sweet and fresh aguas frescas to wash it all down. It’s bold, craveable, a little rebellious, and always done Lola’s way.
