More yield than recipe -how much is too much?
Used the NCHFP recipe that called for ~5lbs of chopped figs, I used 4lbs and 12oz and still got 13 jars instead of 10, I did splash an extra bit of lemon juice in just cause I always do as I’m paranoid, but otherwise followed the recipe to a T

So how much variance is too much variance? Do we know?

21 half pints and 15 quarter pints of Crepe Myrtle jelly canned. Our new favorite!

4 cups of crepe Myrtle “tea”

1/4 cup lemon juice

1/2 tsp butter

2 boxes of pectin

5 cups sugar

Put the tea, juice and butter bin a large stock pot. Whisk in both boxes of pectin. Bring to a rolling boil while continuously stirring . Boil for 1 minute. Add the sugar all at once. Continue stirring and return to a rolling boil. Boil for 1 minute. Remove from heat and skim off any foam. Put in jars and water bath for 10 minutes. Let sit for 5 minutes off heat. Remove jars and let cool for 24 hours.

So… I have some questions. I was talking with my dad the other day about canning. He has always canned his BBQ sauce the following way (and said he was taught by a restaurant owner to canned his marinara sauce the same way) which of course, is NOT how we are taught “by the book”:
- You put clean jars in a hot oven so you have HOT jars.
- you have boiling sauce
- use hot lids.
- place boiling sauce in piping hot jars, place and tighten lid
- then place on the counter where they start to seal as they cool.
That’s it. No water boiling. No pressure canning. That’s how they do it. Always eaten and used it.
Are you saying I could be saving myself hours of time?

Good morning. I have a question, since I make salsa this way. This was my first time making. And it's very good. Can I just chop up tomatoes with skins and seeds, bring it to a boil. Boil for 10 minutes, put in hot jars and water bath for 20 minutes. I asked this question on other canning sites, and they tell me, I have to water bath for 45 minutes for quarts and 35 for pints and put bottled real lemon or citric acid in them.

Dragon fruit you either love them or hate them. You can get white....red and pinkish fleshed ones. Personally the white fleshed one is my favorite.
I preserved and dehydrated some last uear with great success....so I'm doing it again.
I just peeled cut added spoonful of sugar and cooled water from the jug yo an inch headspace.....wiped the rim with hot wayer.....put the lids on finger tight and steam canned for 10mins.
Steam canning is like water bathing.... as they say it's the same but different 😊
I like it because its quicker...and it doesn't use as much water.
You can do a double stack just like pressure canning.
With steam canning you dont use the weight or the pressure gage.
You just do exactly the same start as pressure canning....so 3lt/quarts of water into the canner making sure the water in your canner is the same temperature as the product in your jars.
Put your lid on bring up to heat until the airlock comes up. One the air lock comes up then you start timing.
So if the recipe says to waterbath for 10mins you steam can for 10mins.
Once the processing time has finished just turn of you heat....wait for the airlock to go down.. take off your lid and rest for 10ish minutes. Pop your jars on the bench to cool and seal.
The next day remove the screw bands wash and store your jars in a cool dark place

I got eight pints of peaches canned. I’ve given a few fresh peaches away and I’ll probably use some for cobbler tonight. I love the smell of peaches- and of course I love how they taste!

I try to savor them while I can, because store bought never compares!

Help! This is the first time this has ever happened to me. I have mold growing on the outside of my pressure canned beans. The beans themselves look fine. The rings were removed a couple weeks ago. Might be because the humidity where I store them has been high the last 2 weeks because our dehumidifier broke? Idk if I need to trash these or what…

Why is it that pickles you buy from the store are green, the juice is also greenish, but the ones you make at home aren’t? I see that some peoples do get the green color but mine are all super light in color. How come?
