This colorful dish combines crisp vegetables with protein-rich bean sprouts and a savory Asian-inspired dressing. It works as a light lunch or a flavorful side dish, whether you have a wok or not!

Ingredients:
-16 ounces bean sprouts
-1 green pepper, julienned
-3 slices cooked ham, julienned
-3 stalks green onions, minced
-2 eggs
-2 tablespoons oil for frying
-Sauce: 3 tablespoons lite soy sauce, 1 tablespoon vegetable oil, 1 teaspoon white distilled vinegar, couple drops Asian sesame oil (optional)

Directions:
1️⃣ Place bean sprouts in a heat-safe bowl and cover with boiling water for 3-5 minutes, then rinse under cold water and drain.

2️⃣ In a wok or skillet on medium-high heat, add 1 tbsp oil and heat until shimmering. Add green pepper and ham and cook until warmed and lightly charred or browned. Transfer ingredients to a bowl.

3️⃣ Add the remaining tbsp of oil and heat until shimmering. Beat eggs, pour in and fry as one single piece. Transfer cooked egg to the same bowl as the ham and pepper, and break up egg lightly with chopsticks or a fork.

4️⃣ Toss all cooked ingredients, including bean sprouts, into the wok on medium heat. Mix sauce ingredients together and then pour into wok or skillet. Cook for a few more seconds, until sauce starts to bubble and thicken, then transfer to plates and top with minced green onions.

The quick blanching step makes the sprouts tender while keeping their satisfying crunch intact!
