Hello everyone,

We had a lot of Lion's Mane mushrooms growing for this weekend, but unfortunately, nature took its course, and they did not grow to completion. We will be at the Sautee Nacoochee Farmers Market on Sunday with a small amount of mushrooms and plenty of grow kits. The Pink Oysters are coming in, so hopefully, next week we will be back to our regular schedule.

**Announcements**

We will be at all three of our regular locations this weekend! Our production is increasing, so more mushrooms will be available. Be sure to arrive early to meet all your mushroom needs.

This week, we are excited to introduce a new variety: the Phoenix Oyster (Pleurotus pulmonarius )Don't miss it!

Phoenix Oysters are known for their delicate flavor and versatility in cooking. They have a distinctive fan-shaped or oyster-like cap, typically 5-15 cm in diameter, which is thinner and more delicate than the common oyster mushroom. The cap color ranges from white to pale brown, sometimes with a pinkish hue. They have a slightly sweet, anise-like aroma and a tender texture when cooked.
