A bit about our tamales:
- Our tamales are wrapped and steamed in pre-soaked corn husks. While most people only soak their husks for 30 minutes, we soak ours for 2 hours. This results in softer husks and moist tamales.
- All of our meats are slow cooked overnight. We spend the next morning soaking the husks and preparing the masa, and the rest of the day is spent rolling and steaming the tamales. For this reason, we only offer select tamales each week, and your order may take a couple days once it is received.
- While many kitchens use lard to form their masa, ours does not. Our recipe allows us to play with unique, non traditional flavors and also lets us have vegetarian and vegan friendly options 🙂
- All of our tamales are gluten free, however, all of our tamales contain soy. Please remember that we are an in home kitchen, and while Ileyah is 100% gluten free, Austin is not gluten free. Therefore, there is a (very) small chance of cross contamination (though we work hard to prevent it).
- Last (but not least) our tamales are made fresh each week. We do not freeze them. Once you get them, you can reheat them in the microwave (we recommend 45 seconds per tamale, in the husk), re-steam them for 5-10 minutes on the stove, or they can be wrapped in aluminum foil and tossed in a preheated oven for 5 to 10 minutes. They’re good cold, too, and perfectly safe to eat that way ❤️
