Got up at 4 am and started making cheese!
Today we are working on cheddar that will age from 3 months to 3 years. I will have about 10 lbs produced by 9am and another 10 lbs by noon!
Tomorrow we will work on feta!
See you at thr Nacogdoches Farmers Market this Saturday!

The picture below is neither cheddar or feta, but some Valencay style cheese we made for our Farm To Table dinner last year. It is a cheese made with a layer of ash.

Come see us! We are at the same booth as Merci's World Cuisine. We have locally made cheese! We will have brie ready in about 4 months and are in the process of making Valencay style cheese and blue cheese!
