I almost forgot. I took that chocolate and salted caramel core I made yesterday and made little balls with 2 spoons, dipping each into the melted dark chocolate to make the shell. I then added a little sea salt to each and a tiny drizzle of caramel. Although the caramel flavor was not strong, these are really good!

For a friend at Micron, I am making some truffles... Her birthday is coming up soon, and she wants to buy some for herself. I won't charge her of course, like on her last birthday, but this is an interesting challenge.

Salted Caramel Chocolate Truffles

I have been trying to figure out the best way to make there, and came up with this idea.

First. I tried two recipes for caramel. As one picture shows, the first didn't turn out. 😌 The second recipe turned out so nice, I tossed the first. Burnt my finger too! 😬

I then made the core of the chocolate (butter, cocoa, and sweetened condensed milk), and added a quarter cup of the caramel to it before the chocolate cooled. Now that mixture is resting in the fridge until tomorrow. So, more tomorrow!

Happy Holidays!

Since September, the number of likes and followers have doubled. I find this amazing and very appreciated. I have not posted on this page since 2021, but you guys inspired this post. As a thank you, I am going to share the recipe for the holiday treat I am making to share with friends as a holiday treat.

To give credit where it is due, this recipe was originally in a Hersey's Cookbook. In the last 4 years, I have made so many variations and made it my own.

These truffles are very easy to make, but they are very time consuming. I want to share the 2-part process with you. This is the first of two.

1. Make the decadent core of the truffle.
2. Encapsulate that core. (afternoon post)

Each image has details.

Give this a try, and I am sure you will not be disappointed. Be creative as you like. There is plenty of time to make these for Christmas treats.🎅🎄

Hey Guys!

There are almost 500 Likes to this page, which truly amazes me. So much respect to you all! Although I did not start a business of making desserts in the last year+, I really appreciate the following. From this point forward, I am going to use this page post about all the little things I make and share with friends and family. Maybe later it'll become more of a business. We'll see! :)

Today I am making chocolate for truffles to share with friends for the holidays. A coffee shop here, a coffee shop there; One place of work, and another place of work; Old acquaintances and new. Another picture will be coming.

BUT, for liking this page, I want to share the recipe with you all. The original recipe I started with was out of a cookbook. Since then, I've sort of made it my own. The core chocolate is the best I've ever had in a truffle. The great thing about this recipe is you can eat your mistakes, haha.

Please check the comment below. I would love to see what you come up with, so if you try this, please share a picture below and tell me what you think and what you changed.

I made over 120 truffles, and it was time to pass some out for the holiday, SO I WOULD NOT EAT THEM ALL! 😂 I made a Peppermint Schnapps Truffle with a dark chocolate core, white chocolate coat with a little peppermint extract stirred in, and topped with crushed candy cane. I also made what I am calling a "Pandemic" Chocolate Truffle, using some of the "Pandemic Vanilla" my friend Francis gave me for helping with the Dog Tracking test a few weeks ago. It really is a nice blend of a couple of varieties of vanilla beans and alcohol! I delivered a little package to her yesterday, and she really liked them. This morning, I ran for coffee and handed out a few packages There are a couple more to share this afternoon. What happens with the rest, we'll see! ;-)

With Christmas coming up, the workplace parties do too! I offered to make some shortbread cookies for a small office party today, after two botched attempts. As you can see, no cookie cutters were injured in the process of making these, haha, but they turned out really nice. I hope the bank enjoys these today!

Recently, a friend purchased a full batch of truffles (40+) from me. She was throwing an engagement party and wanted something special to give to her friends. These had my soft dark chocolate core with Baileys Irish Cream added for flavor. On top of the hard semi-sweet shell, I drizzled white chocolate.
