What I Grew 🥬🫜 ➡️ What I Made 🥗🍳

Sometimes a “quick” win in the garden is sowing a variety of lettuce and radish seeds. Ready to harvest in about a month, they’ve made breakfast salads and avocado toast all the more delicious.

Sowing the next round of seeds today. Planting the following seeds from :

🌱 Flashy Trout Back Lettuce
🌱 Merveille de Quatre Saisons
🌱 Petit Dejeuner Radishes

Number 1️⃣ and Number 3️⃣ are in the most frequent rotation right now.

I love a good breakfast and how it kick starts the day for me. But, I don’t like fumbling about the kitchen trying to decide what to make.

Zoom calls await and homeschool schedules are increasing as we round the corner to the end of year so I need recipe formulas that are super easy to prep and can be ready in minutes with ingredients that are interchangeable with the seasons.

Here’s the current menu rotation:
🍞 Breakfast Toast: Spring time radishes and the last of the garden pea shoots have added sweet and crunchy notes to the usual avocado toast. Chia seeds pump up the volume of fiber and the last of the summertime tomato jam added a savory and smoky sweet note.
🥞 Buttermilk Pancakes: I make these weekly for the kids’ breakfasta so it’s only fair to indulge in a couple with a seasonal fruit compote and garden berries.
🥣 DIY Yogurt Parfait: Homemade Meyer Lemon Curd has been the fruit spread of the month and swirling this into plain greek yogurt has been a delight. Prepping granola on the weekend means this is ready in minutes during the weekday.
🍳 Bistro Style Omelette: The home fries at Winston’s are so delicious I’ve been inspired to honestly my version here at home. Garden greens for a breakfast salad and seasonal veggies (mushrooms + spinach atm) make this deeply satisfying.
🥣 Savory Oats: these oats from the Farmer Mai Flour Share are so delicious. Paired with sautéed greens (kale, chard, and spinach as of late) and topped with a fried egg and salsa, this is a savory option I can have on repeat.

Which is your favorite idea?

So, how much did I spend? 💰⬇️

CSA box: $32
Radishes + Pea Shoots + Green Garlic: $18
Asparagus + Dandelion Greens + Artichokes: $8

Total for this week’s produce pickup: $58

CSA box this week gave us little gems and frisée for salads, purple carrots, butternut squash, green garlic, red chard.

Shopping local and supporting local farms has been a game changing way to shop sustainably and economically these days. Spring produce is giving us such delightful ingredients to keep meals fresh and vibrant. What’s your favorite spring veggie right now?

Lots of great dinner ideas planned for the week ahead. What would you make?
