Just in time for the dog days of summer 🥵: this crystalline, brilliant, unoaked Chardonnay is well worth the trip to Santa Barbara. Our Lady of Guadalupe is consistently one of our coldest and wettest Chardonnay vineyards, yielding a wine that is both briny and precise. In our final vintage in 2024, we made just 92 cases of this coastal Chardonnay, aging in clay amphora and stainless steel to provide Old World restraint to a quintessentially California site.

5 years in the making 🐓 Saint Rooster is a Carneros White Vermouth made in collaboration with visiting Uruguayan winemaker Pablo (Vermouth Rooster). Crafted from a base of Green Acres Chardonnay, we added California brand to extract a bold, refreshing blend of aromatics:

🍃 Toasted fig leaf
🍋‍🟩 Makrut lime
🫚 Orris root
🧉 Yerba mate
🌿 Coriander

With only 10 cases available, Saint Rooster is sold directly through our Garden Tasting Room (pick up only). Through Friday (7/24) we’re pouring this delightful digestif after all our wine tastings at Saintsbury.

We love it on the rocks with an olive 🫒 and floral citrus, in a spritz with our Pét-Nat 🍾, or topping off a crispy lager for a Beericano/Spaghett 🤌

Jambon-Beurre-Fromage 🇫🇷 is it the perfect sandwich??? We stopped in at Napa’s Oxbow Public Market for a quick pairing for Saintsbury’s Sonoma Coast Pinot Noir (also pouring at Live Fire Pizza):

🥖 Pick up a demi-baguette from THE MODEL BAKERY bakery, split lengthwise.
🧈 Temper some REALLY GOOD salted butter from Fatted Calf , and smear generously.
🐖 Layer their thinly sliced smoked ham with reckless abandon.
🧀 Shave piles of nutty, alpine-style cheese (like Comté or Gruyère) from Hudson Greens & Goods
🌭Balance tiny pickles (aka cornichons) atop your mountain of decadence, with a swipe of Dijon for extra flair.
🍷Close your creation, pour yourself a glass of Pinot Noir or Chardonnay, and revel in the exquisite pleasure of this crusty-chewy-creamy-fatty-salty-sweet treat.
