Cheers to the pleasures of the French table. Our newest Bubbles & Bites menu, debuting November 16, celebrates the flavors and traditions of France, from Parisian café classics to Burgundy-inspired braises, each brought to life alongside expressive w**es from our Carneros estate.

Founded by the Ch*****ne Taittinger family, Domaine Carneros has been fluent in French pairings since 1987. Joie de France brings that heritage to the table in a delicious new way, with four savory bites and one sweet finale thoughtfully matched with our best-loved sparkling w**es and Estate Pinot Noir to reveal something new in both the dish and the glass.

Led by our seasoned W**e Educators, this elevated pairing experience is an invitation to savor one of France’s finest traditions: the simple pleasure of good food, good w**e, and good company.

Did you know we make a Merlot? đŸ· Meet our best-kept secret.

Carneros is Chardonnay and Pinot Noir country, with the majority of its vineyards planted to those two grapes. But tucked into Larry Hyde's legendary vineyard is something special. Here, Merlot hangs deep into October, layering on ripeness while holding onto its freshness and bright acidity.

Block #38 gets the royal treatment with just one cluster per shoot, so every bunch hangs freely in the sun. The yields are tiny. Only four barrels were made✹

In the glass expect aromas black cherry, sarsaparilla, spiced plum, and forest floor, followed by leather, rich tannins, blackberry, and baked fig on the palate.

Bright lemon meringue keeps it fresh on a sunny afternoon, while buttercream, vanilla, and toasted almond notes bring a richness that feels made for longer, cooler nights. As the October light turned golden over the Club Terrace, our members gathered to toast the completion of harvest with CEO Remi Cohen and Sparkling W**emaker Zak Miller.

The evening moved into the Estate Room for a Spanish-inspired feast with two showstopping paellas, vibrant sides, and cinnamon sugar churros to finish.

Tasting w**es still in active fermentation, and a rare glimpse into the 2026 vintage as it comes to life. Zak shared the story of this year's harvest while guests explored a curated lineup of Domaine Carneros w**es.

In Ch*****ne, the tĂȘte de cuvĂ©e is the "head of the blend," a house's finest w**e. At Domaine Carneros, that w**e is Le RĂȘve, our sparkling Blanc de Blancs. Right now our w**emakers and vineyard team are tasting through every Chardonnay lot to decide which will become the next Le RĂȘve.

The grapes often come from the same blocks in our estate vineyards, but nothing is guaranteed. Each vintage is judged on its own, and only the very finest lots earn a place in the blend.

Just as Comtes de Ch*****ne stands as our parent house, Champange Taittinger's pinnacle, Le RĂȘve is ours.

Our w**emaker Zak Miller is the steward of a Pinot Noir program that began almost by accident. Every bottle we make today traces back to one barrel. Zak walks us through the beginnings of our Pinot Program.

In the words of our founding w**emaker, Eileen Crane:

"In the early years of the w**ery, we produced more grapes than we needed and sold some of our grapes to a well-known Pinot Noir w**emaker who then had a small brand, Etude. In 1992 we had fewer grapes to sell him and he was disappointed as he greatly appreciated our quality. My assistant w**emaker and I decided we should make just a barrel of still Pinot Noir. We thought we could give the w**e to our co-workers as a holiday present in a couple of years. When Claude Taittinger came to visit us in the fall, as he did every year, he asked what we had in the barrel and I told him we had made some red Pinot Noir. He wanted to taste it and when he did, he asked me to ship it to him in Paris and he would sell it in his five-star hotel, the HĂŽtel de Crillon. We began producing Pinot Noir in earnest. Today, we are as passionate about Pinot Noir as we are about sparkling w**e."

More than three decades later, we carry that same spirit forward. What started as a holiday gift is now a cornerstone of who we are ✹
