Red Hills AVA. High elevation changes everything here. The altitude keeps a cooler baseline, and the nights drop drastically after hot summer days. That swing forces the vines to slow down every evening, preserving acidity while sugars develop. Add intense UV at this height and the grapes build thicker skins to protect themselves. More tannin, more structure, more hang time. This is why fruit from these sites carries the depth we’re after.
