Easy Apple Pie Perfection: You'll Want to Keep This One!

**Ingredients:**
* 1 box (2 count) refrigerated pie crusts
* 6-7 medium baking apples (like Granny Smith or Honeycrisp), peeled, cored, and sliced
* ½ cup granulated sugar
* ¼ cup all-purpose flour
* 1 teaspoon ground cinnamon
* ¼ teaspoon ground nutmeg (optional)
* 1 tablespoon lemon juice
* 2 tablespoons unsalted butter, cut into small pieces
* 1 egg, beaten (for egg wash, optional)

**Directions:**
1. Preheat oven to 425°F (220°C).
2. In a large bowl, gently toss sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
3. Unroll one pie crust and carefully fit it into a 9-inch pie dish. Trim any excess crust, leaving about a ½ inch overhang.
4. Pour the apple mixture into the crust-lined dish, mounding slightly in the center. Dot the top of the apples with the small pieces of butter.
5. Unroll the second pie crust and place it over the apple filling. Trim and crimp the edges of both crusts together to seal. Cut several small slits in the top crust to allow steam to escape.
6. Brush the top crust lightly with the beaten egg, if desired, for a golden finish.
7. Bake for 15 minutes. Reduce oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust browns too quickly, loosely tent with foil.
8. Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set.

Strawberry Shortcake (Seriously, Save This One!)

**Ingredients**

**For the Shortcakes:**
* 2 cups all-purpose flour
* 1/4 cup granulated sugar, plus extra for sprinkling
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 1/2 cup (1 stick) cold unsalted butter, cubed
* 3/4 cup cold milk or heavy cream, plus 1 tablespoon for brushing

**For the Strawberries:**
* 1 pound fresh strawberries, hulled and sliced
* 2-3 tablespoons granulated sugar (adjust to taste)

**For the Whipped Cream:**
* 1 1/2 cups cold heavy whipping cream
* 2-3 tablespoons powdered sugar
* 1/2 teaspoon vanilla extract

**Directions**

1. **Prepare the Strawberries:** In a medium bowl, combine the sliced strawberries with 2-3 tablespoons of granulated sugar. Stir gently and let sit at room temperature for at least 15 minutes while you prepare the rest of the shortcake components. The sugar will draw out the delicious juices.

2. **Make the Whipped Cream:** In a chilled large bowl, combine the cold heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer (or whisk vigorously by hand) on medium-high speed until medium-stiff peaks form. Be careful not to over-whip. Cover and refrigerate until ready to use.

3. **Bake the Shortcakes:**
* Preheat your oven to 400°F (200°C).
* In a large bowl, whisk together the flour, 1/4 cup granulated sugar, baking powder, and salt.
* Add the cold, cubed butter to the dry ingredients. Using your fingers or a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
* Pour in the 3/4 cup cold milk or cream and stir with a fork just until the dough comes together. Do not overmix.
* Lightly flour a clean surface. Turn the dough out onto it and gently pat or roll it to about 3/4 to 1 inch thickness.
* Use a 2 1/2 to 3-inch round biscuit cutter to cut out shortcakes. Alternatively, cut the dough into squares.
* Place the shortcakes on an ungreased baking sheet. Brush the tops lightly with the reserved 1 tablespoon of milk and sprinkle with extra granulated sugar for a crispy, sweet crust.
* Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
* Remove from the oven and let cool slightly on a wire rack.

4. **Assemble the Shortcakes:**
* Once the shortcakes are slightly cooled but still warm, carefully split each shortcake horizontally using a knife or your fingers.
* Spoon a generous amount of the macerated strawberries and their juices over the bottom half of each shortcake.
* Top with a large dollop of the whipped cream.
* Place the top half of the shortcake on top. Serve immediately and enjoy!

Easy Apple Pie: You'll Want To Save This One!

**Ingredients:**

* 1 box (2 count) refrigerated pie crusts
* 6-8 medium baking apples (like Granny Smith or Honeycrisp), peeled, cored, and sliced (about 6 cups)
* 1/2 cup granulated sugar (adjust to taste based on apple sweetness)
* 2 tablespoons all-purpose flour
* 1 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg (optional)
* 1 tablespoon lemon juice (optional, helps prevent browning and brightens flavor)
* 2 tablespoons unsalted butter, cut into small pieces
* 1 large egg, whisked with 1 tablespoon water (for egg wash, optional)
* 1 tablespoon granulated sugar, for sprinkling (optional)

**Directions:**

1. **Prep & Preheat:** Preheat your oven to 425°F (220°C). Unroll one pie crust and fit it into a 9-inch pie plate. Trim any excess crust if necessary.
2. **Make Filling:** In a large bowl, combine the sliced apples, 1/2 cup sugar, flour, cinnamon, nutmeg (if using), and lemon juice (if using). Toss gently until the apples are evenly coated.
3. **Assemble Pie:** Pour the apple mixture into the pie crust-lined plate, mounding it slightly in the center. Dot the top of the apples with the small pieces of butter.
4. **Top & Seal:** Unroll the second pie crust and carefully place it over the apple filling. Trim the edges, then crimp them together to seal the top and bottom crusts. Cut several small slits (about 1-inch long) in the top crust to allow steam to escape during baking.
5. **Optional Finish:** For a golden, shiny crust, brush the top with the egg wash and sprinkle with 1 tablespoon of sugar.
6. **Bake:** Bake for 15 minutes at 425°F (220°C). Then, reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust edges start to brown too quickly, you can loosely cover them with aluminum foil.
7. **Cool:** Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.
