We decided today was a perfect day to bottle and release our new Grappa! In time for “APERITIVO” from 3-5pm here. Karl Neubauer will be offering samples to those having a spritz on the deck for today’s event! This release is super unique, and may be the first ever Saperavi cask finished Grappa! We have been partnering with McGregor Vineyard since the first year we were open, using their estate grown Riesling grapes for all of our Grappa production, and we decided to take it one step further by using one of their freshly dumped Saperavi reserve barrels to finish the aging in. This release started in one of our custom made NYS Black Cherry casks before being transferred to this wine cask to finish aging in. It has a vibrant deep purple color, lovely floral nose, and a soft long finish with some sweet burnt orange, toasted oak, and candied fruit on the palate. Grappa began as a humble brandy spirit made from the grape pomace left after pressing wine(seeds,stems,skins and a little juice), but we have tried to elevate each release by being very selective in our process and use of cooperage, and by using more of the juice in fermentation. This all helps to create a very complex and beautiful spirit which is perfect for sipping anytime, but especially nice after enjoying a meal as it does aid in digestion. This is another small yield cask of only 129 bottles, so we will be limiting this to select accounts, and mostly available here in our tasting room.
