Organic Cracked Wheat 🌾

One of my favorite loaves I’ve ever made… 30% Coarsely Cracked Wheat - 83% Hydration - 100% Naturally Leavened - 1000% Delicious and kid approved.

100% Organic Wheat 🌾/ $8

This loaf is a departure from the norm, using very low 70% hydration versus 80-90% or even closer to 100%. This is due to the wheat being used, organic hard red winter wheat.

Flour proteins are comprised mainly of glutenin and gliadin. The gliadin correlates with extensibility (stretching) and the glutenin correlates with elasticity (ability to return back to normal after being stretched).

This flour seems to contain very high levels of gliadin! The dough is capable of absorbing high levels of water however quickly turns into bread soup with no form. The low hydration in this dough allows for better structure while the glutenin is lacking.
