“Oktoberfest is upon us and the most delicious beer of the year is flowing, especially at ! 🍻

Tomorrow, Friday 9/22, I’ll be doing a surprise kick-off to Oktoberfest pop-up from 7-9pm.

I’ll be slinging a special new Oktoberfest Burg topped with Barrique Dortmunder beer cheese and drunk onions. Warm, soft pretzels with Barrique Rauchbier mustard will also be on the menu! 🥨

Finish Line: a hot dog sando 🏁

Sunday was the last day of Burger Week and we were reaching our 700th burger made in 7 days, so the last thing I wanted to eat was another goddamn burger.

At the first of two events of the day, we made a tasty brekkie sando and an awesome hot dog creation, so I had some smuggled natural casing hot dogs from Chicago and some excellent onion rolls from leftover. I put a chihuahua cheese blanket to both the top and bottom buns, added some Mexipoix then drizzled some Rancho sauce to see where this would take me.

This was seriously one of the best things l I have eaten all year. There is absolutely no hot dog that even comes close to a natural casing Vienna beef and all of the condiments on there came together to make the most harmoniously savory street treat. 🔥

The Sando Society might have to come out of pop-up retirement just to make this and feed it to the masses. 🤷🏻‍♂️

This is a sando appreciation post. The Sando Society started off as exactly that: a place to appreciate sandos and fan-boy out about my fave spots.

Somewhere in the middle, I started doing pop-ups and this page became more of a side hustle, which was ok. But it took away from the simple purpose of creating sandos and giving props to my fave makers like etc.

Anyways, I’m back to being a fan. I’ll still be hustling and making food, but that’s going to be over at . The Sando Society will be a home for pure, unadulterated sandwich content.

Pictured here is the Ultra Ultra from Bills Sandwich Palace. It’s a flavor dream nestled between a delicious bun. That’s all.

We’re always playing around with recipes, so what better way to share what we’ve been experimenting with than hosting a Sando R&D Night?!

R&D Night Menu:
SlopPpyYy Joseph - A traditional sloppy Joe if Joe studied abroad in South Korea. Gochujang ground beef, chihuahua cheese, sweet and sour pickled cucumbers, toasted brioche bun

Chicky Chicky - The big hit at our 4/20 event. Pulled chicken tinga, magic bean spread, chihuahua cheese, pickled red onions, Mexican tomato chicken flavored chips, toasted sesame seed bun

Bean There (Done That) - Remember your vegetarian phase? Handmade black bean patty, Living Waters beer cheese, pickled red onions, shreddy letty, tomato, Secret Sauce drizzle, toasted brioche bun

The first of our wet hopped wild ales from the 2023 season is here: behold the return of WET HOP STRATA!

A blended wild ale brewed with all Tennessee grown grain, we selected barrels of 1 year Basique, 2 year American pale ale, and 3 year blonde to compose the final blend. We conditioned these casks on Strata brand wet hops from Crosby Hops - special hops, overnighted from Oregon and set to use in our barrels within 24 hours of harvest. These wet hops are bursting with unique flavor and convey a much different profile in their raw form when compared to their dried, pelletized version. Only available once a year at peak harvesting times, wet hops are a rare treat to work with. We conditioned this beer on Strata wet hops for much longer than our typical hopped sours- one barrel for 7 months and one 19 months.

Despite aging on hops for length, Wet Hop Strata does not taste hoppy in the traditional sense- instead, a musty, somewhat funky hop aroma gives way for a bright passionfruit juiciness flanked by flavors of plum, mandarin and vanilla. Moderately acidic with a creamy, soft body, this wild ale finishes somewhat sweet and very refreshing, with zero bitterness.

Keeping the burger train going…

Our fundraiser pop-up last Saturday opened our eyes to the fact that Nashville likes burgers. Like, REALLY likes burgers.

So we’re going to play into that. Stop by this weekend, Friday from 2-5PM and Saturday from 2-7PM, for a burger or two at
