Slow Cooker Beef & Broccoli
Ingredients
· 2 lbs beef chuck roast or flank steak, thinly sliced against the grain
· 4 cups fresh broccoli florets
· 1 cup beef broth
· ½ cup low-sodium soy sauce
· ¼ cup packed brown sugar
· 2 tbsp hoisin sauce
· 2 tbsp rice vinegar
· 1 tbsp sesame oil
· 4 cloves garlic, minced
· 1 tbsp fresh ginger, grated
· 1 tsp onion powder
· ½ tsp black pepper
· 2 tbsp cornstarch mixed with 3 tbsp cold water
· Sesame seeds and sliced green onions, for garnish
· Cooked white rice, for serving
Instructions
1. Place the sliced beef in the bottom of the slow cooker.
2. In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, hoisin sauce, rice vinegar, sesame oil, minced garlic, grated ginger, onion powder, and black pepper. Pour the mixture evenly over the beef.
3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the beef is tender.
4. For a thick, glossy sauce, whisk the cornstarch slurry into the slow cooker. Cover and cook on HIGH for 15–20 minutes, stirring occasionally, until the sauce has thickened.
5. Add the fresh broccoli florets during the final 20–30 minutes of cooking. Stir gently, cover, and cook on HIGH until the broccoli is tender but still bright green.
6. Taste and adjust the seasoning if needed.
7. Garnish with sesame seeds and sliced green onions. Serve hot over steamed white rice.

💡 Pro Tips:
· Slice Against the Grain: This is the secret to tender beef. Look for the lines in the meat and cut perpendicular to them.
· Add Broccoli Late: Broccoli turns mushy quickly in a slow cooker. Adding it in the final 20–30 minutes keeps it vibrant and crisp-tender.
· Thicker Sauce: The cornstarch slurry is essential for that glossy, restaurant-style sauce. Make sure the slow cooker is on HIGH when you add it.
· Make It a Meal: Serve over white rice, brown rice, or noodles to soak up the savory sauce.
