Working on tonight’s dinner. All recipes from one of my favorite non-vegan chefs, . All recipes used tonight came from his book PLENTY. Cucumber salad w/smashed garlic and ginger, Castelluccio lentils w/tomatoes (no Gorgonzola), and Chickpea, tomato and bread soup. I love Ottolenghi’s cookbooks. This food is seriously good anytime of year, but I especially love it when the weather turns warm. Delicious AND healthy! I seriously need to get to London again. Bon appetit!
