Oh my goodness! This snow ❄️! We cannot deny it, Winter is Here! With it, so much meaning as we wrap-up the season that seems to start and end with a long, continuous sprint of getting it done. With crops out of the field, hives wrapped, animals sheltered, and market season a wrap, the change brings with it a certain type of exhale. That being said, I have soo much to catch you up on! Firefly Hard Red Whole Wheat 🌾 sourdough loaf by Bill Ravlin, entomologist and bread baker extraordinaire! Look at the crumb on this one! Few things give us more excitement than other people’s excitement for the organic products we grow on our family farm. Bill has generously shared his formulation for this one loaf that is 50:50 Firefly Hard Red: KA Bread Flour, ~80% hydration. These are bread goals! 🙏💜🌾
Tell me. Did you get your garlic in the ground yet?! While these warm October days and nights without much frost haven’t been great for the weedy organic bean harvest, they have given me a little extra time to get garlic seed in the ground. Hopefully, we’re not too late…I’ve read getting it in the ground about two weeks before the consistent hard frosts. Looking like we may have caught a window! 🙏🙌💜

2022! Here is Firefly’s 2022 Honey Varietals - the colors remind us of Autumn leaves. 🌈💜🐝🍯 All of this honey was collected across our family farm in Barry County, Michigan. Spread across six beeyards and different collection times from mid-June to September, the honey is a reflection of the amazing diversity of trees, flowers, and other nectars a 450 acre, organic family farm can support. When we take the time to sink into our roots, we can recognize and cultivate such a multitude of colors and flavor. 🐝🌈🍯🙏
And that’s a wrap! 2022 At the end of each honey season, I like to line up the honey jars in chronological order of collection to see what all the bees have foraged on from across our family’s farm in Michigan. 🐝🐝🌈🌈 After 15 years of keeping bees, it still blows my mind the diversity of honeys our farm can support! So much flavor, all from one place!
The Great Teachers in Our Life: some may be in the home, out of the home, at school, from a book or manual, video, podcast, or afar. All I know is how grateful we are to have them, especially the one’s right inside the home. Parents continue to teach lessons forever. I’ll tell you what, learning how to hook up this post hole digger and operating it was a lot easier and more efficient with Mama’s tutorial than YOUTube or a manual (all helpful tools) could ever be. When you realize time is limited, you surround yourself with other’s that know and have the love and patience to teach. It’s always people that make the v difference. 💜🙏

Happy Monday, Friends! To start this week out bright, let's look at something both structurally amazing, beautiful and flat out delish! Fewer things are sweeter to the eyes, than Fresh Honey Comb!
We often get the question, 'How To Eat Comb Honey?'
Well, of course, eat it however you’d like! I cannot deny it, I eat it straight from the hive. When I’m out in the bee yard and I spot the first spring honeycomb, I use my hive tool to slice a little corner to chew on. Here, I present some ideas on ways to eat it:
- Eat it straight, dig in with a spoon, and enjoy the chew
- Make it the centerpiece of your cheese and cracker board, you cannot go wrong with brie, goat, or blue cheese and multi-grain crackers
- Shmear it on your favorite bread or grilled cheese sandwich (we LOVE warm or toasty bread)
- Dip in a cup of warm cocoa
- Add a boost to soups or smoothies, it will dissolve in the soup or get smoothed in the smoothie
- Mix into your baking batter; think scones, pancakes, waffles
- Fold honeycomb into ricotta and serve over pancakes and waffles
- Sweeten your tapioca or other warm porridge with honeycomb
- Slice little chunky bits to toss into your nutty, peppery arugula salad topped with almonds and goat cheese
There are so many ways to enjoy this sweet gift from the ‘hive-bee’ as Charles Darwin called it. You cannot go wrong, and while the list above might give you some ideas on where to start, never forget, it’s always a great bet to keep it simple and just go straight for it. Some upscale restaurants will simply present a frame of comb honey (straight from the hive) on the table surrounded by farm fresh cheeses and other delights. Presenting honeycomb in its most pure form is sure to strike up some fantastic conversations and wonder for your table just as it has for thousands of years.

My list of things to preserve is getting shorter (which is good because the number of empty jars 🫙 is becoming fewer…and my enthusiasm is chasing a finish line!!). 🤣🤣

Yesterday marked the beginning of fall planting here in southwest Michigan. Yes, you heard that correctly. Did you know that most cereal grains like spelt, oats, rye, and many wheats prefer cooler climates and so get planted in the fall and harvested late spring and early summer the following year?!
The video shows Archman drilling/planting organic spelt. All this grain talk and cooler weather has us thinking about stone-ground bakes like Ben’s delicious pretzel buns made with whole wheat and spelt! YUM!!
WHAT’S IN A PICTURE? We’re able to so quickly and so easily take pictures these days that sometimes I find myself swiftly moving on to the next thing without much reflection. But yesterday morning, as the Amish Warlord (my mama) and I rose early to move a couple of beehives from one part of the farm to another, I snuck this shot and I have been looking at it ever since. Everything about it reminds me of her BIG spirit!
1) It’s EARLY - and those that know her, know she gets up early ~4 am everyday!
2) She’s ready - ready for anything that might happen at all times possessing the strongest will I’ve ever met.
3) The Light Glows Warm - she might be tough, but her light and kindness is as warm as it gets.
Ben’s beans: Birds egg, tiger eye, and arikara. Ben setup some small test plots this year to see how a few different heirloom beans would perform. Aside from feeding some bunny 🐰 rabbits gourmet, we were able to snag a few for ourselves.

Bee Bread or Fermented Pollen, when we whip it together with fresh raw honey and comb we call it 'Bee Butter.'
What is Bee Bread? Bees collect flower pollen that is rich in vitamins, minerals, proteins, lipids and fatty acids, enzymes, carotenoids and bioflavonoids. Bees process and increase nutritional value of flower pollen through a fermentation process that adds honey and bee secretions to the pollen to make bee bread. It has powerful antibacterial, antifungal and antiviral properties that strengthen the capillaries, reduce inflammation, stimulate the immune system and lower cholesterol levels naturally.
In addition to preservation, the fermentation process of the pollen also renders its nutrients more available. Some proteins are broken down into amino acids, starches are metabolized into simple sugars, and vitamins become more bio-available. This product is raw, fermented, bee bread blended with unfiltered honey from the same hive hosted on 450 certified organic acres. Only minimal amounts are collected each year, as we strictly abide by the 'Golden Honey Rule.' ...Only collecting honey from what is above two deep boxes of brood, honey, and bread.
LOOK CLOSELY at the pictures. You can see the pollen at different stages in the fermentation process from granules of pollen freshly delivered by forager bees to fully fermented 'bee bread' that looks like a smooth gelatinous cake!
It's a wild product, and we never know how much excess the hives will provide (if any) each year!

Across the UK and Europe, many 18th and 19th century magazines, diary entries and paintings refer to the custom of telling the bees.
But the practice may have its origins in Celtic mythology, which held that bees were intermediaries between our world and the spirit world.
Whether it is a birth, death or marriage, the bees were to be told about all important events in their keeper's lives.
It was believed beekeepers had strong connections with the bees, so they deserved to be treated like family, and mourn them when they died.
The superstitious and somewhat cute tradition of 'telling the bees' of a death in the family has been part of rural British folklore for centuries. It was no different for the death of Britain's longest reigning monarch.
What is it about cooler, longer nights that draws me back to Fermentation?
The change of seasons from summer to fall gets me back to my fermented state of mind. There’s something so incredibly satisfying about witnessing the process from which something too tiny to see (microbes 🦠 ) transforms a product (like milk) into a completely different product (like yogurt) with a little help from a change in environmental conditions. All I have to say is ‘it’s pretty cool and delicious!!’ 😁😍🙏😋
I feel Fermentation Season is about to ramp up….in a very slow process kind of way!
