What sweet dreams are made of: berry and basil rice paper mochi 🍓🍃🍡
Luscious .berry Omakase Berries come together with refreshing basil and velvety Greek yogurt in a summer treat that’s clean, cooling, creamy, and just decadent enough.

Prep Time: 10 minutes plus 1-2 hours of freezing
Servings: 8 mochi
Ingredients:
8 sheets of rice paper
2 cups plain Greek yogurt
4 tbs honey (adjust to your preferred sweetness)
8 large Oishii Omakase Berries, chopped into bite-size pieces
4 tbs Gotham Greens Basil, thinly sliced
¼ cup cornstarch
Steps:
1) Add greek yogurt and honey to a bowl and mix well.
2) Stir in the berries and basil.
3) Dust cornstarch onto a plate.
4) Dip the rice paper into a plate of water and submerge for 5 seconds. The paper should have some bend to it, but shouldn’t be completely soft.
5) Lay the moistened rice paper down on the cornstarch and fill with about ⅓ cup of the yogurt filling.
6) Fold up the sheet’s edges like a burrito. Make sure to close the seam to keep the filling from spilling out.
7) Dust with more cornstarch.
8) Repeat assembly with the remaining 7 sheets of rice paper.
9) Freeze the mochis for 1-2 hours until the yogurt is firm, but not frozen solid. Enjoy!
