A delish Arugula salad with a N🫒M Grapefruit vinaigrette is perfect for these hot summer days!

Dressing:
3 Tbsp NOM Grapefruit White Balsamic
2 Tbsp NOM extra virgin olive oil
1 tsp Dijon Mustard
1 minced shallot
Salad:
2 cups of Arugula
1/4 cup toasted walnuts
1/4 cup dried cranberries
1/2 Avocado sliced
Grapefruit segments for garnish
Shaved Parmesan or a Crumbled Blue
To make the salad, on a serving plate, arrange the arugula in a pretty pile, sprinkle with walnuts, red onion and cranberries. Then arrange avocado slices and grapefruit segments on top.
To make the vinaigrette, mix the balsamic, olive oil, dijon, and shallot together in a small bowl or glass. Pour the dressing over the salad, top with Parmesan shavings and serve.
To add extra flavor, toast your walnuts in NOM’s Herbs de Provence, Milanese Gremolata, or for a kick our Chimichurri Verde Evoo.
This salad would be delish topped with grilled chicken, shrimp, scallops, salmon, or a white flaky fish.
