The word “crawfish” is basically a Southern/Louisiana version of a much older word that stuck.

But the animal had names long before Louisiana ever put it in a pot.

In the ancient world, Greeks used a word like astakos for lobster, and sometimes for freshwater crayfish too. Latin later picked that up as Astacus, which is why you still see it in scientific names for European crayfish today.

But that is not where our word “crawfish” directly comes from.

Our everyday word takes a different road.

It starts in Old French with a word like crevice or escrevice, which became modern French écrevisse. English borrowed that into Middle English as crevis or crevise.

Then English did what English always does.

People heard the ending and nudged it into something familiar, so crevis got reshaped by “fish” into crayfish. That change was happening by the 1500s.

“Crawfish” is the same word, just pushed a little farther in the American direction. The craw form shows up later in English, and it became the everyday word in a lot of the South, especially Louisiana.

The funny part is the “fish” in the name is not science. It is sound.

That little folk shift made a freshwater crustacean sound like something you could catch with a rod and reel, and the name never let go.

So when people argue crawfish vs crayfish, they are both talking about the same thing.

It is just different stops on the same road: ancient names, French, English, and finally Louisiana.

🦞 Three tips to keep mail ordered crawfish alive.

1️⃣ Let them wake up before you purge
If you plan to purge, do not dump them straight from that chilled, sleepy state into water. Let them warm up a bit and get a little active first, then start your purge. If you rush it, they can drown and you’ll create more dead loss than you should.

2️⃣ Keep them cool and dry while you wait
If you need to hold them for a few hours before the boil, keep them in the sack and keep them in shade. You can set the sack in a drained ice chest and lay ice on top so it melts through the bag. If you’re using a styrofoam box, poke drain holes. The goal is simple. Keep them cool, and make sure melt water can drain out so they are not sitting in water.

3️⃣ Do not try to keep them overnight
We always recommend boiling the same day they arrive. Live crawfish are perishable, and waiting until the next day is the fastest way to increase dead loss.
