Baked Coconut Shrimp

Ingredients:

1 pound large shrimp, peeled and deveined
1 cup shredded coconut flakes
1 cup bread crumbs
2 eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray or melted butter, for greasing
Instructions:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or melted butter.
In a shallow bowl, whisk the eggs together until well beaten.
In a separate bowl, combine the shredded coconut flakes, bread crumbs, salt, and black pepper. Mix well.
Take a shrimp and dip it into the beaten eggs, making sure it's fully coated.
Then, transfer the shrimp to the coconut and bread crumb mixture, pressing gently to adhere the coating to the shrimp. Ensure the shrimp is evenly coated.
Place the coated shrimp on the prepared baking sheet. Repeat the process with the remaining shrimp.
Lightly spray the coated shrimp with cooking spray or drizzle melted butter over them. This will help them crisp up in the oven.
Bake the shrimp in the preheated oven for about 15-20 minutes, or until they are golden brown and cooked through. Flip them halfway through the baking time for even browning.
Once baked, remove the shrimp from the oven and let them cool for a few minutes.
Serve the baked coconut shrimp as an appetizer or main dish. You can enjoy them with a dipping sauce like sweet chili sauce or a tangy mango salsa.

Tomato and Garlic Pasta

Ingredients:

8 ounces pasta (such as spaghetti or penne)
4 medium tomatoes, diced
4 cloves garlic, minced
3 tablespoons olive oil
Salt and pepper to taste
Fresh basil leaves, chopped (optional)
Grated Parmesan cheese for serving (optional)
Instructions:

Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat.
Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant. Be careful not to let it burn.
Add the diced tomatoes to the skillet and season with salt and pepper to taste.
Cook the tomatoes for about 5-7 minutes, stirring occasionally, until they soften and release their juices. The tomatoes should start to break down slightly but still retain some texture.
If desired, use the back of a spoon to crush some of the tomatoes to create a chunky sauce.
Add the cooked pasta to the skillet with the tomato and garlic mixture. Toss everything together to combine and coat the pasta evenly with the sauce.
Cook for an additional 1-2 minutes to heat the pasta through.
Taste and adjust the seasoning if needed.
Remove from heat and serve the tomato and garlic pasta.

Peanut Noodles

Ingredients:

8 ounces noodles (e.g., spaghetti, linguine, or soba noodles)
1/2 cup peanut butter (smooth or crunchy)
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 teaspoons honey or maple syrup (optional, for sweetness)
1 clove garlic, minced
1/2 teaspoon grated ginger (optional)
Red pepper flakes or sriracha sauce (optional, for heat)
Chopped green onions and crushed peanuts for garnish (optional)
Instructions:

Cook the noodles according to the package instructions until al dente. Drain and set aside.
In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, sesame oil, honey or maple syrup (if using), minced garlic, and grated ginger (if using). 2 cups broccoli florets
