Peanut Noodles
Ingredients:
8 ounces noodles (e.g., spaghetti, linguine, or soba noodles)
1/2 cup peanut butter (smooth or crunchy)
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 teaspoons honey or maple syrup (optional, for sweetness)
1 clove garlic, minced
1/2 teaspoon grated ginger (optional)
Red pepper flakes or sriracha sauce (optional, for heat)
Chopped green onions and crushed peanuts for garnish (optional)
Instructions:
Cook the noodles according to the package instructions until al dente. Drain and set aside.
In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, sesame oil, honey or maple syrup (if using), minced garlic, and grated ginger (if using). Stir well until the mixture is smooth and well combined. If you prefer a thinner sauce, you can add a tablespoon or two of hot water and mix until desired consistency is reached.
Taste the sauce and adjust the flavors to your liking. If you prefer it spicier, add red pepper flakes or sriracha sauce to taste.
Place the cooked noodles in a large bowl.
Pour the peanut sauce over the noodles and toss gently to coat the noodles evenly.
If desired, garnish with chopped green onions and crushed peanuts for added texture and flavor.
Serve the peanut noodles immediately and enjoy!
