We had our last Dinners with Dad on Sunday. Will and Cate brought him a cinnamon roll that enjoyed. Oh the memories I’ve made with my best guy !! I’ll miss you Dad ! I love you !

We took our homemade biscuits and topped with the home chef soup directly from the container. Perfect dinner !!! So easy.
Bake in 350 degree oven for twenty min !! The potatoes are sliced russet potatoes cooked in microwave for two min. Then brown in an oil of your choice. We used canola oil. Brown on both sides and top with sour cream!!

Feeling a bit like we hit on a really good easy soup!!! Home Chef soup! Harris Teeter just started carrying the brand. It is located over near their hot soup bar. We chose the chicken and wild rice. It is very thick so we thinned it with chicken stock. I added some fresh ground pepper and a bit of olive oil after I dished it. The soup was two thumbs up ! We can’t wait to try the Thai flavor. Stay tuned ! We used half of the container and had two healthy portions. The price is 6.99 but we will get four great portions ! We also think it would be great to make a chicken pot pie !

Harris Teeter has large pieces of salmon! We cut it up and freeze it in our portion size. This week Dad wanted to make salmon cakes. We coated our fish in salt pepper and olive oil. Then we wrapped it in parchment paper and baked at 375 for 12 minutes. We cooked it longer as we wanted it flakey. We removed the skin and flaked the fish with a fork. In a bowl we combined one egg ( whipped) a table spoon of mayo , some dry mustard , a teaspoon of Worcester sauce and some hot Sauce.
We lightly coated our salmon with the sauce. Do not use all of the sauce. Then we added panko crumbs to the fish. You add enough to be able to “patty” the cakes. We make ours small.
Once you have made your cakes we brown them in butter in a skillet. We then freeze them for quick meals !!! So good!!

Dad and I both love Hot Dogs ! We both are watching sodium and hotdogs are loaded. We don’t eat them often but when we do , we fry the all beef dog in a pan and then cut it lengthwise and share one dog ! We top with raw onions , my aunt Betty Ann’s home made relish and mustard ! Half the sodium ! All the taste !

This was so easy and so good ! We took a can of southwest vegetable soup. You could use any vegetable soup you have in your cabinet. We drained and rinsed the soup. We cooked 1/2 cup of rice and 1 and 1/2 cup of water. We bring it to a boil and turn the heat as low as it will go and cover and cook for 18 min. We added the drained soup to the hot rice and mixed. We added some hot sauce for a kick. It was a perfect quick and easy lunch.

Jumbo lump crab cakes. !! Get a small bowl and put in one egg white. 1/2 teaspoon of Worcestershire sauce, 1/2 teaspoon of dry mustard , 1 teaspoon of mayonnaise and half a teaspoon of hot sauce. Mix that in a bowl and pour it into a cup. Put about 1/2 cup of your crab meat into a bowl and coat it just enough. Don’t get too much liquid or they won’t stay together. It’s a science !!! You can add some of the liquid from your cup if needed . Pour in a small amount of Panko and lightly mix. Make a patty and lightly coat it in extra Panko on a plate and fry in salted butter . This made three medium crab cakes. Follow Dinners With Dad

Keeping with the Spinach theme!! Sautéed spinach on top of stove with olive oil. Made a little nest and cracked egg and sprinkled with salt and pepper . Cooked until white was done. Put in broiler to cook yolk

Chicken Cacciatore ala Skip!
Sear boneless skinless chicken thighs in olive oil until almost done. We cut them in pieces . Add garlic and sauté!
Add chopped onions and green pepper . We chopped them thick. Saute until tender. Add about a cup of low sodium V8 , a can of crushed Italian tomatoes and some whole tomatoes. I took a knife and rough cut the tomatoes. Add a fair amount of Italian seasoning and mushrooms and put in oven for about twenty min. We served over rice and then over pasta as a leftover. Top with Parmesan cheese ! Enjoy!!! So quick and easy !! We had plenty leftover to freeze !!
