Hi Friends,
Huge love to Easy Peasy Cooking Club for the shoutout! Seriously, my heart is full knowing you all haven’t abandoned me while I've been away from the kitchen—and yes, I hear your stomachs growling, the kimchi comeback is officially in motion.
While I get back on my feet, let’s talk about Easy Peasy Cooking Club. If you are chronically short on time, gluten-free, or just tired of standing in front of an open fridge hoping a fully cooked dinner will magically materialize, she is your new best friend.
She literally handles the meal planning AND the grocery shopping so you don't have to wander the aisles wondering if gluten hides in certain sauces (spoiler: it does, and it’s rude). What she does is a total game changer and lifesaver. Go check her out!

Hi Friends!
Time for a quick leg update! The ankle has officially decided to cooperate and is healing beautifully. My fibula, however, is still taking its sweet time and acting like a total drama queen—but we’re getting there.

I just survived my first week of PT! The big win? I can officially put about 30–40% of my weight on that foot. I’m not strutting down any runways just yet, but I can finally stand on two feet again.
Being back in the kitchen—even just to whip up quick meals—feels like heaven. My ultimate goal is standing long enough to get back to making that delicious kimchi we all miss so much. Fermentation waits for no one, but my bones had other plans!

Seriously, thank you all for sticking by me through this year's chaotic journey. It hasn’t been the easiest year, but your love, patience, and cheers keep me pushing through every painful but much required PT.

Can’t wait to see your faces sooner rather than later. Wishing you all a truly blessed day!

Omgosh Friends,
We need to talk about Ella’s Eatz & More because I am currently filing a missing persons report on my own self-control.

I took one bite of the Biscoff Cinnamon Roll and legitimately started speaking in tongues. Just straight up “holy moly” on repeat like a broken record. Now, full disclosure: I don’t even like cinnamon rolls. I originally bought a pack out of the kindness of my heart for my husband.

Plot twist: That poor man was lucky to get a single crumb. He basically had to negotiate hostage terms just to get one piece while I hoarded the rest like a pastry-crazed dragon. Soft, pillowy, loaded with cinnamon perfection—marriage vows were tested, and the cinnamon roll won. Jk jk 😝😉

Then came the Jalapeño Popper Scone. Sweet mother of carbs. It is cheesy, savory, lightly spicy, and frankly disrespectful with how good it is. I consider myself a scone connoisseur, and this thing raised the bar so high the rest of the bakery world needs a ladder.

Next up on my hit list is the Blueberry Lemon Scone, assuming I set a 5:00 AM alarm, because her stand was practically cleaned out.

Huge thanks to Ella’s Eatz for ruining our grocery budget and kickstarting our household’s newest, most delicious addiction. 10/10, no notes, hide your pastries from your spouse. 😉😉😂😂❤️

Bibim Naengmyeon: 1, My Broken Bones: 0.
🍜🔥🤣
Nothing cures hot summer days—or temporary couch-potato status—like cold, chewy buckwheat noodles tossed in spicy-sweet sauce, topped with cucumber, pickled pear, radish, squid, and a soft-boiled egg.

Major shoutout to my amazing husband for playing Sous Chef and Assistant Noodle Retriever while I slowly navigate my way back into the kitchen!

Big news: I'm heading to the doctor this Tuesday for follow-up X-rays, praying my bones have finally remembered how to do their job so I can start physical therapy. If all goes well, I’m aiming to be back on two feet and back in full Kimchi Master mode by next month! 🤞

Thank you all SO much for your incredible patience while my kimchi empire has been on pause. I don't just miss fermenting veggies; I miss connecting with all of you! Stay tuned, and fingers crossed I'll be back on my feet and filling your fridges again real soon!

Hey friends! Just a friendly reminder that I am still officially "retired" from the kimchi game.

Turns out, my foot decided to break in three separate places (because why do things half-assed, right?). The doc has strictly forbidden me from putting any weight on it until mid-August, so I’m currently ruling my couch kingdom with an iron fist and an elevated leg.

I’m so sorry for the kimchi drought—I know your rice bowls and ramen are suffering. I’ll keep you all posted on when my foot is back in business and ready to ferment.

Thank you for your patience, understanding, and for not replacing me with store-bought. Have a wonderful (and hopefully fracture-free) summer!

Hi Friends,

I have some good news and some bad news.
The bad news: I managed to have a fight with gravity... and gravity won. I broke my ankle and am heading into surgery this Tuesday, which means I am officially out of commission and unable to make or provide kimchi this month. Apparently, fermenting delicious cabbage requires two functioning legs, and the universe has put me on a temporary mandatory break.

The good news: Ill be having surgery and entering my Cyborg stage.

In all seriousness, I want to apologize for how chaotic this year has been. It’s been a genuinely rough ride for my family lately, and this ankle situation is just the wonderfully painful cherry on top.

I appreciate your support, understanding, and patience more than I can say. You all are the absolute best. As soon as I am cleared to get back into the kitchen (and can safely operate a knife without being a hazard to myself), I will let you know when I’m taking orders again.

I’m so sorry for the inconvenience, and I appreciate each and every one of you!

Yangpa Jangajji (Korean Pickled Onion) is a great side dish that has a balance of saltiness, tartness and sweetness. It's a great side dish for Korean BBQ or any meat dishes. The best part is it stores for months. The one of the left, I added Thai chili peppers to make it spicier. The one on the right is very traditional.

Let me know in the comments if you'd like to try this. 😁😋😁

Mungeun-ji is 1yr old kimchi, which is great for cooking rather than eaten raw. It's safe to eat as long as it's been stored properly in the refrigerator, and with no mold being visible. It will be extremely sour, which is why it's best for cooking like making Kimchi Soup or cooked with pork belly.
