π²π Creamy Norwegian Salmon Soup
Creamy, comforting, and loaded with tender salmon and vegetables! π³π΄β¨ This Norwegian-inspired salmon soup is the kind of cozy dinner youβll want to make again and again.
π₯ Ingredients
β’ 400 g salmon fillet, cut into cubes
β’ 400 g potatoes, cubed
β’ 200 g onion, finely chopped
β’ 200 g carrots, grated
β’ 400 g tomatoes, peeled and chopped
β’ 200 ml heavy cream
β’ 30 g fresh dill, chopped
β’ 1.25 L water
β’ 2 tbsp vegetable oil
β’ Salt & black pepper, to taste
β’ Green onions, for serving

1. Heat the oil in a large pot. SautΓ© the onion and carrots until softened and lightly golden.
2. Add the chopped tomatoes and simmer for about 2 minutes.
3. Pour in the water and bring to a boil. Add the potatoes and salt, cover, and cook for about 10 minutes.
4. Add the salmon pieces and pour in the cream. Gently simmer until the salmon is cooked through and the potatoes are tender.
5. Stir in the fresh dill and season with black pepper and additional salt if needed.
6. Remove from the heat, cover, and let the soup rest so the flavors come together.
7. Serve hot with plenty of chopped green onions on top. πΏ
