Crispy Garlic Parmesan Chicken Bites 🍗🧄🧀 Ingredients Chicken 1–1.5 lb chicken breast, cut into small bite-size pieces Marinade ¾ cup buttermilk ¼ cup pickle juice 1 egg 1 tsp salt 1 tsp black pepper 1 tsp garlic powder 1 tsp paprika Method (marinade) Mix all marinade ingredients in a bowl. Add chicken pieces and coat well. Cover and marinate for a minimum of 1 hour and best for 4–12 hours. Crispy coating 1½ cups all-purpose flour 2 tbsp cornstarch 1 tsp salt 1 tsp black pepper 1 tsp paprika 1 tsp garlic powder Mix everything until well combined. Coating the chicken Take chicken straight from the marinade into the flour mixture. Press firmly to create crinkles and texture (this is key for crispiness). Let coated chicken rest for 5–10 minutes before frying. Frying Heat oil to 340–350°F (170–175°C). Fry chicken in batches for 3–4 minutes until lightly golden. Remove and rest for 2–3 minutes. Return to hot oil and fry again for 2–3 minutes until deep golden and ultra crispy. Drain on a wire rack, not paper towels. Garlic parmesan sauce Ingredients 4 tbsp butter 4–5 cloves garlic, finely minced or grated ¼ cup grated parmesan Parsley Italian seasoning 1 tbsp mayonnaise Method Melt butter, add garlic and cook for 30–45 seconds without browning. Turn off heat and stir in mayonnaise, parmesan, parsley and Italian seasoning. Toss and serve Add crispy chicken to a bowl. Brush the garlic parmesan sauce over the chicken bites evenly. Finish with extra parmesan on top and serve hot ✨ .

Cheesy Potato Croquettes 🧀 🥔 Ingredients • 3 large potatoes, boiled & mashed (no lumps) • ½–¾ cup shredded mozzarella (or mozzarella + cheddar mix) • 2–3 tbsp milk (as needed) • Flour • Salt & black pepper to taste • ½ tsp garlic powder • ½ tsp paprika • ½ tsp onion powder • ½ tsp chilli flakes For coating • ½ cup all-purpose flour • 2 eggs, beaten • 1–1½ cups breadcrumbs or panko For frying • Oil, for deep frying Instructions 1. Boil potatoes until fork-tender. Drain well and mash while hot until smooth. 2. Mix in salt, pepper, garlic powder, paprika, onion powder, chilli flakes, flour, and milk (just enough to make it creamy but firm). 3. Let mixture cool slightly, then mix in shredded cheese and parsley. 4. Scoop about 2 tbsp mixture and shape into logs or balls. 5. Coat each croquette in flour → egg → breadcrumbs. Press crumbs gently. 6. Chill croquettes for 20–30 minutes. 7. Heat oil to 350°F (175°C). 8. Fry in batches for 2–3 minutes, turning until golden brown. 9. Drain on rack and rest 1–2 minutes before serving. .

Crispy Chipotle Chicken Tacos with fresh pico de gallo + spicy taco sauce 🌮 Ingredients Chicken • Chicken breast, cut into small chunks • Blended chipotle pepper in adobo sauce • Olive oil • Salt & black pepper • Smoked paprika • Garlic powder • Onion powder • Chili powder or cayenne Pico de Gallo • Roma tomatoes, finely chopped • Red onion, finely chopped • Fresh cilantro, chopped • Fresh lemon or lime juice • Black pepper & salt, to taste Spicy Taco Sauce • Mayonnaise • Sour cream or Greek yogurt • Hot sauce • Paprika or chili powder • Lemon or lime juice • Salt For Assembly • Small tortillas (corn or flour) • Shredded mozzarella cheese • Oil or butter (for crisping) Instructions 1. Heat olive oil in a pan over medium-high heat. Season chicken with salt, black pepper, garlic powder, paprika, and blended chipotle in adobo. Cook until golden and fully cooked through. Set aside. 2. In a bowl, mix tomatoes, red onion, cilantro, citrus juice, black pepper, and salt. Taste and adjust seasoning. 3. Mix mayo, sour cream, hot sauce, paprika, citrus juice, and salt until smooth and creamy. 4. Fill tortillas with shredded mozzarella cheese and cooked chicken. Chicken Marinade • 2 lbs chicken wings • 1 tsp salt • 1 tsp black pepper • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp red chilli powder • 1 tsp smoked paprika • 1–2 tbsp neutral oil Mix wings with marinade and let rest at least 30 mins (or longer for more flavor). Dry Coating • 1 cup all-purpose flour • 2 tbsp cornstarch • 1 tsp garlic powder • 1 tsp onion powder • ½ tsp black pepper • 1 tsp red chilli powder • 1 tsp smoked paprika • ½ tsp salt Wet Batter Bowl • ¼ cup of the flour mix • Splash water or milk → make a slightly thick paste Coat & Double Fry 1.Take marinated wings → dip in wet batter first 2. Then coat in dry flour mix, press to stick 3.
