Strawberry Pie: A Deliciously Fresh and Fluffy Dessert
A creamy, buttery crust cradles a luscious strawberry filling balanced with a touch of sugar and lemon. Finished with light whipped cream, this classic American pie is perfect for gatherings or a comforting dessert.
Ingredients
For the Pie Crust:
1½ cups all-purpose flour
½ cup unsalted butter, chilled and cubed
¼ cup granulated sugar
1 cold egg yolk
2 to 4 tablespoons ice water
For the Strawberry Filling:
4 cups fresh strawberries, hulled and halved
¾ cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Whipped Cream Topping:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
Prepare the Pie Crust: In a large mixing bowl, combine flour and granulated sugar. Add chilled, cubed butter. Use a pastry cutter or fingertips to mix until the mixture resembles coarse crumbs. Add cold egg yolk and mix well. Gradually add ice water, one tablespoon at a time, until dough holds together. Wrap and refrigerate for 30 minutes.
Preheat the Oven: Preheat to 375°F (190°C) while the dough chills.
Roll Out the Dough: Lightly flour a surface and roll dough to 1/8-inch thickness. Fit it into a 9-inch pie pan, trim edges, and poke holes in the bottom with a fork.
Bake the Crust: Place on a baking sheet and bake for 20 to 25 minutes until golden.
Prepare the Filling: In a bowl, mix strawberries, sugar, cornstarch, lemon juice, and vanilla. Transfer to the baked crust.
Chill and Set: Add a domed lid (if desired) and refrigerate for 2 hours.
Make the Whipped Cream: In a chilled bowl, whip cream with sugar and vanilla until stiff peaks form.
Assemble and Serve: Spread whipped cream on top of the set pie and slice.
Notes
Chill dough for at least 30 minutes before rolling for best results. Substitute fresh strawberries with frozen, thawed varieties if necessary. Optional: Add a pie lid or use a lattice top. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Pineapple Cheesecake Fluff
Ingredients
For the Cheesecake Fluff
8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 box (3.4 oz) instant vanilla pudding mix (dry)
1 can (20 oz) crushed pineapple, very well drained
1 tub (8 oz) whipped topping, thawed
1 cup mini marshmallows
½ cup sweetened shredded coconut (optional)
For the Topping
1–2 cups whipped topping
Pineapple chunks or tidbits
2–3 tablespoons crushed graham crackers
Pinch of cinnamon (optional)
Instructions
In a large bowl, beat softened cream cheese until completely smooth.
Mix in powdered sugar and vanilla until light and creamy.
Beat in the dry pudding mix until fully incorporated and thickened.
Drain pineapple extremely well, pressing out excess liquid.
Gently fold into the mixture.
Fold in whipped topping carefully to keep the mixture light and airy.
Gently mix in marshmallows and coconut (if using).
Transfer to a 9×13-inch dish or foil pan and smooth lightly.
Spread whipped topping over the surface.
Top with pineapple chunks and sprinkle with crushed graham crackers.
Add a small pinch of cinnamon if desired.
Refrigerate at least 2 hours, preferably overnight for best texture.
Serve chilled.

Delicious Pot of Pinto Beans to eat with My Tortillas
My house smells heavenly............ I apparently didn't make enough. They were gone in minutes, seriously. So yummy! 😍
Ingredients
* 2 cups dried pinto beans
* 8 cups water
* 1 onion, chopped
* 3 garlic cloves, minced
* 1 smoked ham hock or 4 slices bacon (optional)
* 1 teaspoon salt
* 1 teaspoon black pepper
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 2 tablespoons olive oil
* fresh cilantro for garnish
Instructions
1. Rinse and soak the pinto beans overnight. Drain before cooking.
2. In a large pot, heat olive oil and sauté onion and garlic until fragrant.
3. Add beans, water, ham hock or bacon, salt, pepper, cumin, and chili powder.
4. Bring to a boil, then reduce heat and simmer for 2–3 hours until beans are tender.
5. Stir occasionally and add more water if needed.
6. Serve hot with warm tortillas and garnish with fresh cilantro.

Chow Chow (Old Fashioned)
Ingredients
1 small cabbage, chopped
6 to 8 green or red tomatoes, chopped
6 medium bell peppers, chopped
6 large onions, chopped
2 hot peppers, chopped
3 cups sugar
5 cups white vinegar
1/4 cup salt or pickling salt
How To Make CHOW CHOW
Put all ingredients in a large pot and bring to a boil. Reduce heat and cook for 20 to 25 minutes or until desired tenderness is achieved.
This recipe is designed to be put in pint jars and sealed. Makes 8 to 9 pints. But you could cut recipe down to use for one night of dinner.

Ingredients
Cookie Bar Base
1 cup unsalted butter, softened
2 oz cream cheese, softened
1¾ cups sugar
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
¼ teaspoon coconut extract
2½ cups all-purpose flour
½ teaspoon baking powder
1 teaspoon salt
Coconut Cream Frosting
1½ cups sweetened shredded coconut, divided
½ cup unsalted butter, softened
3 oz cream cheese, softened
2 cups powdered sugar
½ teaspoon coconut extract
⅛ teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
Beat butter, cream cheese, and sugar until light and creamy.
Mix in eggs, egg yolk, vanilla, and coconut extract.
In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients.
Spread batter evenly in pan and bake 25 minutes. Cool completely.
Spread ½ cup coconut on a baking sheet and toast at 350°F for 4–6 minutes, stirring once. Cool.
Beat butter and cream cheese for frosting until smooth.
Add powdered sugar, coconut extract, and salt; mix until creamy.
Spread frosting over cooled bars.
Sprinkle with remaining coconut and toasted coconut.
Slice and serve.

Pecan Cream Pie
Ingredients:
1 pre-baked 9-inch pie crust (homemade or store-bought)
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
1 (8 oz) tub whipped topping (Cool Whip), thawed
1 cup chopped pecans
1 cup whole pecan halves
1/2 cup brown sugar
3 tablespoons butter, melted
1/2 teaspoon vanilla extract
Whipped cream for garnish
Directions:
In a large bowl, beat softened cream cheese and powdered sugar until smooth. Gently fold in the whipped topping until creamy and fluffy. Stir in chopped pecans and spread mixture evenly into the pre-baked pie crust. In a separate bowl, mix pecan halves, brown sugar, melted butter, and vanilla extract until well coated. Sprinkle this mixture evenly over the cream filling. Chill the pie for at least 4 hours or overnight before serving. Garnish with piped whipped cream around the edges before serving.
