🎂 Funfetti Sprinkle Cake Recipe

Ingredients

For the cake
• 2 cups all-purpose flour (250g)
• 1½ cups granulated sugar (300g)
• 1 cup unsalted butter, softened (225g)
• 4 large eggs
• ½ cup milk (120ml)
• 2 teaspoons baking powder (8g)
• ½ teaspoon salt (3g)
• 2 teaspoons vanilla flavour (10ml)
• ½ cup colourful sprinkles (80g)

For the buttercream frosting
• 2 cups unsalted butter, softened (450g)
• 6 cups icing sugar (720g)
• ¼ cup milk or whipping cream (60ml)
• 2 teaspoons vanilla flavour (10ml)

For decoration
• Pink drip icing or coloured white chocolate
• Extra colourful sprinkles
• Whipped buttercream swirls

Instructions

Cream the butter and sugar together until light, pale and fluffy.

Add the eggs one at a time, mixing well after each addition. Add the vanilla flavour.

In another bowl, mix the flour, baking powder and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Fold in the colourful sprinkles gently.

Divide the batter evenly between prepared cake pans.

Bake in a preheated oven at 170°C until the cakes are golden and a skewer inserted in the centre comes out clean, about 25–35 minutes depending on the pan size.

Allow the cakes to cool completely.

For the buttercream, beat the butter until creamy. Gradually add the icing sugar, then add the milk and vanilla. Beat until light and fluffy.

Place one cake layer on a cake board or plate and spread buttercream over it. Repeat with the remaining layers.

Cover the entire cake with a smooth layer of buttercream.

Add the pink drip around the edges, pipe buttercream swirls on top and decorate generously with colourful sprinkles.

Ingredients

For the vanilla ice cream
• 2 cups whipping cream (480 ml)
• 1 cup condensed milk (300 g)
• 1 teaspoon vanilla extract (5 ml)

For the chocolate ice cream
• Half of the prepared vanilla mixture
• ¼ cup unsweetened cocoa powder (25 g)
• ¼ cup melted chocolate (45 g), optional

Instructions

Whip the cold whipping cream in a large bowl until thick and fluffy.

Add the condensed milk and vanilla extract, then gently fold everything together until smooth and creamy.

Divide the mixture into two equal portions.

Leave one portion plain for the vanilla ice cream.

Add the cocoa powder and melted chocolate to the second portion. Mix until smooth and evenly chocolatey.

Transfer both mixtures into a freezer-safe container. You can place them side by side for a beautiful chocolate-and-vanilla combination.

Cover tightly and freeze for at least 6–8 hours or overnight until firm.

Scoop into bowls and garnish with chocolate shavings if desired.

• 1 1/2 cups graham cracker crumbs (150 g)
• 5 tablespoons unsalted butter, melted (70 g)
• 2 tablespoons granulated sugar
• 16 oz cream cheese, softened (450 g)
• 1/2 cup granulated sugar (100 g)
• 2 large eggs
• 1 teaspoon vanilla extract
• 1/2 cup sour cream (120 g)
• 1 tablespoon all-purpose flour
• 1 tablespoon lemon zest
• 2 tablespoons fresh lemon juice

For the lemon topping:
• 1/2 cup lemon curd (120 g)
• Thin lemon slices, for garnish
• White chocolate, melted, for drizzling
• Pistachios, finely chopped, optional

For the chocolate topping:
• 4 oz semisweet chocolate, chopped (115 g)
• 1/3 cup heavy cream (80 ml)
• 2 tablespoons white chocolate, melted
• 2 tablespoons crushed cookies or graham crackers

For the caramel topping:
• 1/3 cup thick caramel sauce (100 g)
• 2 tablespoons white chocolate, melted
• 2 tablespoons crushed cookies or toffee crumbs

How to make them:

Preheat your oven to 325°F. Line a 12-cup muffin pan with paper liners.
Mix the graham cracker crumbs, melted butter, and sugar until evenly moistened. Divide between the liners and press firmly into the bottoms. Bake for 5 minutes, then cool slightly.
Beat the softened cream cheese and sugar until completely smooth. Add the eggs one at a time, mixing gently after each. Stir in vanilla, sour cream, flour, lemon zest, and lemon juice. Avoid overmixing.

Ingredients:
• 2 cups graham cracker crumbs (200 g)
• 5 tablespoons unsalted butter, melted (70 g)
• 24 oz cream cheese, softened (680 g)
• 1 cup granulated sugar (200 g)
• ¾ cup sour cream (180 g)
• 3 large eggs, room temperature
• 2 teaspoons vanilla extract
• 2 tablespoons all-purpose flour (16 g)
• ¼ teaspoon salt
• ½ cup crushed pineapple, very well drained (120 g)
• 1 tablespoon pineapple juice

For the raspberry layer:
• 1½ cups fresh or frozen raspberries (185 g)
• ¼ cup granulated sugar (50 g)
• 1 tablespoon cornstarch (8 g)
• 1 tablespoon lemon juice (15 ml)

For the crumble topping:
• ¾ cup all-purpose flour (90 g)
• ½ cup brown sugar, packed (100 g)
• ½ cup quick oats (45 g)
• 6 tablespoons unsalted butter, melted (85 g)

How to make it:

Preheat your oven to 325°F (165°C). Line the bottom of a 9-inch springform pan with parchment paper.
Combine the graham cracker crumbs and melted butter. Press firmly into the bottom of the pan and bake for 8–10 minutes. Let cool slightly.
Beat the cream cheese and sugar until completely smooth. Add the sour cream, vanilla, flour, and salt.
Beat in the eggs one at a time on low speed, just until incorporated. Fold in the well-drained crushed pineapple.

Milky Nougat Bars

Ingredients
• 1 cup (200g) sugar
• ½ cup (170g) glucose syrup or honey
• ¼ cup (60ml) water
• 1 egg white
• ½ cup (60g) powdered milk
• 2 tbsp butter
• 1 tsp vanilla
• ½ cup roasted peanuts or almonds, optional

Method
1. Beat the egg white until very stiff and fluffy.
2. Boil sugar, glucose syrup and water until the syrup reaches 145°C (293°F).
3. Slowly pour the hot syrup into the whipped egg white while beating continuously.
4. Beat for 5–8 minutes until thick, white and glossy.
5. Add powdered milk, butter and vanilla. Beat until smooth, then fold in nuts if using.
6. Press into a lined tray and smooth the top.
7. Let it set completely, then cut into bars.
