The Mighty Cobb Salad 🥗💪

- Blue cheese crumbles
- Cooked bacon, chopped
- Avocado, diced
- Leafy greens (like romaine or mixed greens)
- Hard-boiled eggs, sliced
- Grilled chicken breast, diced
- Cherry tomatoes, halved
- Red onion, thinly sliced
- Olive oil
- Red wine vinegar
- Dijon mustard
- Salt and pepper to taste

Instructions:
1. Start by preparing your ingredients. Cook the bacon until crispy and chop it into bite-sized pieces.

2. Boil the eggs for about 10-12 minutes, then cool them in ice water, peel, and slice them.

3. Grill or pan-sear the chicken breast until fully cooked, then dice into bite-sized pieces.

4. In a large bowl, layer your leafy greens as the base.

5. Arrange the grilled chicken, hard-boiled egg slices, diced avocado, cherry tomato halves, chopped bacon, blue cheese crumbles, and red onion slices artfully on top of the greens.

Eggplant Rollatini

Ingredients:

2 large eggplants, sliced lengthwise into 1/4-inch thick slices
1 1/2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg, beaten
2 tbsp fresh basil, chopped (plus more for garnish)
1 jar marinara sauce (about 24 oz)
1/2 tsp garlic powder
Salt and pepper to taste
Olive oil for brushing
Instructions:

Preheat the oven to 375°F (190°C).
Arrange eggplant slices on a baking sheet. Brush both sides with olive oil and sprinkle with salt and pepper. Roast for 10-12 minutes, until tender and lightly browned.
In a bowl, combine ricotta, mozzarella, Parmesan, egg, garlic powder, and fresh basil. Mix until smooth and season with salt and pepper.
Spread a spoonful of the cheese mixture on each roasted eggplant slice and roll them up tightly.
In a baking dish, spread a layer of marinara sauce. Place the eggplant rolls seam-side down in the dish, then top with the remaining marinara sauce and sprinkle with extra mozzarella cheese.
