Ingredients:
12 oz penne pasta
1 lb chicken breast, diced
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 cups frozen peas and carrots
1 can (10.5 oz) cream of chicken soup
1/2 cup chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
Fresh parsley, for garnish
Directions:
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add diced chicken breast and cook until browned and cooked through, about 7-8 minutes. Remove from skillet and set aside.
In the same skillet, sauté onion and garlic until soft and fragrant, about 3-4 minutes.
Add frozen peas and carrots to the skillet and cook for 2-3 minutes, until heated through.
Pour in the cream of chicken soup, chicken broth, and heavy cream. Stir to combine.
Season with dried thyme, rosemary, salt, and pepper. Bring the mixture to a simmer, stirring occasionally, for about 5 minutes.
Add the cooked chicken and pasta to the skillet, stirring to combine. Simmer for another 2-3 minutes until everything is heated through.
Transfer the pasta mixture to a baking dish. Sprinkle shredded cheddar cheese and breadcrumbs on top.
Bake for 15-20 minutes, until the cheese is melted and bubbly and the top is golden brown.
Garnish with fresh parsley before serving.
