Carolyn’s Greek Salad Recipe 👇 2 English cucumbers, peeled and diced 2 cups cherry tomatoes, halved 1/2 red onion, minced 1 cup black olives, halved (optional) Juice of 1 lemon 2-3 tablespoons extra virgin olive oil 1 (8-ounce) chunk good-quality feta 2 teaspoons finely chopped mint Salt and pepper, to taste Greek seasoning, to taste Add everything to a large bowl and mix well. It was absolutely perfect after marinating in the fridge for about 2 hours.

Gochujang Pulled Pork Ingredients: • 8 ish lb bone-in pork shoulder • 2 T Chinese five-spice powder • Garlic salt, to taste • Gochujang BBQ sauce (see below) Method 1. Season the pork shoulder with Chinese five-spice powder and garlic salt. 2. Place in a slow cooker and cook on low for about 18 hours until very tender. 3. Remove pork, discard bone and fat cap, and shred. 4. Toss with about half of the Gochujang BBQ sauce and add more as desired. 🔥Gochujang BBQ Sauce Ingredients: • 4 T UNSALTED reg/dairy-free butter • 4 T gochujang • ½ cup LOW-SODIUM soy sauce (or coconut aminos for GF) • ½ cup ketchup • ½ cup brown sugar • ½ cup sweet chili sauce • 1 cup water • 2 tablespoons garlic powder • ½ tablespoon ginger powder • ½ tablespoon white pepper Method 1. Melt butter in a saucepan over medium heat. 2. Mix in gochujang until smooth. 3. Add remaining ingredients. 5. Simmer for 10–15 minutes until slightly thickened. 6. Add half of this to the pulled pork, if making. 🔥 Curry Butter Corn Ingredients: • 4 ears of corn, cut in half and lightly steamed • 4 T reg/dairy-free butter • 1 T curry powder • 3 T brown sugar (or white sugar) • Salt, to taste Method 1. Lightly steam corn until just tender. 2. On low, melt butter in a pan and stir in curry powder, brown sugar, and salt. Keep this on low heat because it will harden if it’s too high. 3. Toss warm corn in the mixture until fully coated.
