This week feels like winter when it’s supposed to be spring. So decided to make a delicious heart warming stew! Check out her recipe below :)

Tuscan White Bean & Sausage Stew

Ingredients:

Olive oil
1 pound sweet Italian sausage, sliced 1/2”
1 tablespoon tomato paste
1/2 teaspoon ground cumin
3-4 small carrots, diced
2 celery stalks, diced
1 onion, chopped
2 garlic cloves, minced
2 -14 ounce cans great northern white beans, drained and rinsed
1 - 14 ounce can crushed tomatoes
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
A parmesan cheese rind
2-3 sprigs of fresh thyme
2-3 sprigs of fresh rosemary
1 bay leaf
4 cups vegetable stock
1 cup white wine
2 teaspoons balsamic glaze

Directions:

1. Heat oil in a large dutch oven and add the sausage and cook until brown. About 7 minutes. Transfer to a plate lined with a paper towel.
2. Add the tomato paste and cumin to the pot. Cook for about 2 minutes until dark brown. Add carrots, celery, onion and garlic. Cook until vegetable have softened, about 5 - 10 minutes. Add in the wine and cook until it almost evaporates. Stir in the beans and vegetable stock.
3. Add in the salt, thyme and rosemary and bring to a boil. Reduce heat and allow to simmer gently for 2-3 hours.
4. Return the sausage to the pot. Simmer for 5 minutes and add the pepper and the balsamic glaze. Remove the rind and the stems from the thyme and rosemary.
5. Ladle into bowls and add a few shreds of parmesan. Serve with thick slices of country bread.

As much as it's warming up, it's still hearty soup weather so long as you still have to bundle up! πŸ“·:
