These FETA BAKED EGGS are simple, nourishing and packed with flavor- making for the perfect breakfast!
INGREDIENTS:
•3x Nature's Yoke Legacy Free Range Eggs
•1 Tbsp extra virgin olive oil
•2 cloves garlic, minced
•1 cup cherry tomatoes,
•1/2 cup green bell pepper
•1/3 cup Danish feta cheese, crumbled
•1/3 cup spinach
•Salt, to taste
•Black pepper, to taste
INSTRUCTIONS:
1. Preheat oven to 360 degrees
2. Combine olive oil, garlic, tomatoes and peppers. Divide among 3 ramekins
3. Roast for 20mins. Remove from oven, make a well in the center and crack in eggs. Sprinkle feta over the top
4. Bake for a further 10mins, until whites are set, but yolks remain soft (or to your preference)
5. Top with salt and pepper, serve with toasted sourdough & enjoy!
