with nonstick or coconut oil spray and then push a

Have you ever made a frittata? What about with Bacon and Mushrooms? The best part is, it's completely Gluten Free and perfect for any meal of the day!
😀❤🥚
Ingredients
2 tablespoons plus 1 teaspoon olive oil, divided
4 slices thick cut bacon, diced
16 ounces sliced mushrooms
Kosher or fine sea salt
Black pepper
10 large free-range eggs
1½ cups grated Parmesan cheese, divided
3 cups baby arugula
1 tablespoon balsamic vinegar
Instructions
1. Heat 1 teaspoon olive oil in a 10-inch oven-proof skillet over medium heat. Add the bacon and cook for 2 minutes. Add the mushrooms, 1 teaspoon salt, and ½ teaspoon pepper. Cook, stirring occasionally, until the mushrooms have released their liquid and the liquid has evaporated, 12-14 minutes. Remove pan from the heat.
2. Preheat the oven to 400 degrees.
3. Lightly beat the eggs and pour over the mushrooms and bacon. Sprinkle 1 cup
Parmesan cheese over the top of the eggs and bake for 10 minutes or until the eggs are set.
4. Toss the arugula with 2 tablespoons olive oil, the balsamic vinegar, remaining ½ cup Parmesan cheese, and a large pinch of salt and pepper. Put on top of the frittata and serve.

As many of you know, Pie Day is a highlight of the Project Rousseau year, and this year we were delighted to be able to return to our larger festivities. For many of our students baking 400 pies for homeless shelters across the city was their first in-person community service event since COVID. Many of these students expressed an eagerness to continue their community service endeavors and we are excited to have them restart this habit of giving back to others in-person in the coming weeks and months.
Pie Day would not be possible, however, without the phenomenal support of those who donate their time, goods, and more to our event. We would like to extend a huge thank you to Nature's Yoke who once again provided organic eggs for our pumpkin mix and Dig Inn who not only provide many of our students with a weekly grocery donation but supplied many ingredients to make this event a success!
Once again, our students’ service to others was featured on ABC7NY, CBS New York, and NBC New York and we hope that they inspired others to give back this holiday season.

Saturday was composting day at the Canton Library. Thank you to Nature's Yoke for donating the natural compost. Lucas Toews explained why natural compost is so important to our Baltimore Harbor and the Chesapeake Bay. Thank you all of our volunteers, the Kiwanis Club of Canton-Fells Point, the Church on the Square, and the Friends of the Canton Library. These volunteers did an amazing job of getting the job done on a steamy humid morning. The gardens of the library will thrive with the addition of the good organic compost. Thank you to Church on the Square for bringing donuts and flavored water to the event. It sure sweetened the day!
The transformation of the library grounds in the past two years is a big and rewarding project of the Friends of the Canton Library. We support the library and it's programs, such as the recent addition of the children's pizza garden. Thank you to all of our partner's along the way. We could not have done this without you.
