We often see a butter boom in the weeks between Thanksgiving and Christmas, when kitchens are buzzing with holiday baking.

: You might be able to tell where someone is from just by the shape of their butter stick?

The East Coast is home to a longer, thinner version, also known as Elgin-style, while the West Coast has a shorter, fatter variety called the Western stubbie. But why?

Butter production first took off in the early 1900s, and because dairy production was stronger on the East Coast at that time, most butter was produced and distributed east of the Rockies.

The Elgin butter company, out of Elgin, Ill., manufactured the machines that sliced and packed butter into those long, skinny prisms.

When West Coast dairies ramped up their butter business in the 1960s, they simply couldn’t get their hands on the same East Coast butter cutters.

Instead, they used machinery that cut that creamy goodness into short, fat squares. Same butter, same weight — just shaped by history (and hardware).

Today, as many butter brands have gone national, Elgin-style sticks are the standard. But nostalgia is a powerful thing, and some brands still produce Western stubbies to satisfy their more sentimental customers.

“DFA is partial to Elgins”, says Jenny Mehlman, senior director of marketing. “That’s the shape you’ll find in all of our farmer-owned butter brands, including Plugra Butter and Keller's Creamery.”
