De Hoek Farm’s 2020 Winter Beef Event is underway. Like our past events, this is your opportunity to:
• Purchase unfrozen beef
• Request special cuts
• Reserve hard-to-get small quantity items like hanger steak and tenderloin roast
Here’s how it works:
• Complete the attached order form and send a photo of it by text or email. If that seems too involved, you may call/text/email your order minus the order form…just please remember to send name and contact info. There is no minimum purchase.
• The beef will be available for pick-up Sat Feb 8 thru Tue Feb 11, 2020 unfrozen and of course anytime thereafter frozen.
Background for new customers:
• De Hoek Farm is a small producer of Black Angus beef. We are distinguished by the fact that we operate our own onsite USDA-certified abattoir, and because our animals are in a familiar, minimally-stressed environment when they become consumables, the beef remains extraordinarily tender. We are small and produce beef quarterly, so what isn’t pre-sold, we freeze.
• The freezers we use are commercial-grade freezers that operate at colder temperatures than typical residential freezers. Plus, our packaging removes all air, preserving the texture and taste of the beef. We find that the quality of the beef does not degrade from freezing.
• That said, we recognize that many people want to purchase unfrozen product. Accordingly, each production period, we offer a short window during which we offer our beef chilled, aged and not yet frozen. We will keep the beef that we are aging now and butchering in early Feb in the chiller for four days starting Sat Feb 9th. So if purchasing unfrozen beef is important to you, this is your opportunity. After Feb 11th, what remains will be available for purchase anytime thereafter frozen. Note that with the Spring and Fall Event, we sold out of all the beef we kept out of the freezer.
• Our cryovac-packaged beef has a shelf life of 30+ days in the refrigerator and months and months frozen.
• We produce the following cuts standardly: hanger, skirt, flank, ribeye, strip, tenderloin roast, sirloin, picanha, flap, flat iron, brisket, short ribs, stew meat, liver, tongue, bones, oxtail, and of course ground beef. Our standard thickness for steaks is 1½”. We will cut anything you want in any thickness you want with advance request. Note that T-bones, Porterhouses, filets and rib roasts are not part of our standard production and we request that you advance-order those or any other cuts of your cooking and consuming dreams.
• We prefer cash, checks or Venmo, and we take credit cards.
• We will happily ship beef by overnight mail. Think of us when you’re gifting!
